So I've been experimenting with different Paleo pancake recipes and I think this has to be my favourite so far.  I absolutely love pancakes, but I try to save them as a weekend treat.  When I choose to eat them on Saturday morning after a WOD I like to make this recipe with the protein powder added in.  If I decide to have them on a Sunday (my rest day from crossfit) I leave out the protein and add a little extra almond meal.  Either way they're simple and delicious!


  • 1 banana, mashed
  • 1 egg
  • 1 & 1/2 tbsp almond meal
  • 1 tbsp almond butter
  • 1 tbsp protein powder
  • 1/2 cup blueberries
  • 1/2 tsp vanilla
  • Cinnamon
  • Coconut oil
  • Pure maple syrup


  1. Mix all ingredients together
  2. Grease a pan with some coconut oil
  3. Pour batter on skillet (approximately 4 small pancakes) over low heat and brown both sides
  4. Top with pure maple syrup
