So unfortunately I caught a pretty bad cold this week and all I wanted was a big bowl of soup.  And it had to be simple, and it had to be made with very few ingredients because I didn't have much at home and I didn't have the energy to go to the grocery store.  I remembered having seen a great recipe for a soup with only five ingredients on Manifest Vegan, and happened to have just those five in my house.  Here's how to whip it up.


  • 1 head cauliflower
  • 3 sweet potatoes
  • 1 sweet onion
  • Olive oil
  • 2 cloves garlic
  • 7 cups water
  • Salt and pepper


  1. Preheat oven to 400F
  2. Cut up cauliflower and lay out on a cookie sheet, drizzle with oil, and bake for 25 minutes
  3. In a large pot bring water, sweet potato, onion and garlic to boil.  Cook until sweet potatoes are tender
  4. Add all ingredients together and blend.  You can leave out a few pieces of cauliflower to bulk up the soup if you like
  5. Garnish with green onion, salt and pepper
