One of my biggest weaknesses in this world is ice cream, and when I decided to cut diary out of my diet it was one of the toughest things to give up.  I quickly found out about coconut ice cream and began buying that at the grocery store.  I still eat it and love it, but I wanted to find a slightly healthier alternative that I could make at home.  This is so easy and you can add different ingredients to make a flavour you like!


  • 1 very ripe banana
  • 2 squares dark chocolate
  • 1/4 cup coconut milk


  1. Cut up banana and freeze overnight (whenever I have bananas that I'm afraid will go bad before I use them I chop them up and put them in the freezer so I'm always prepared when I'm craving this)
  2. In a food processor blend dark chocolate until its broken into small chunks
  3. Add banana and coconut milk and blend until smooth
  4. Eat straight away or freeze until later, but be sure to take it out of the freezer about 15 minutes before you want to eat it
