PALEO HERB CRACKERS

So if you follow me on instagram you know I went a little crazy for some paleo herb crackers today.  And I loved when a fellow follower commented "apparently among paleos, crackers = crack" because that's exactly how I felt when I started eating these!  So just be warned, they are extremely addicting, and hard to stop eating once you've stopped.  Came across these on Multiply Delicious, enjoy!

INGREDIENTS

  • 2 cups almond meal
  • 1/2 tsp salt
  • 2 tbsp rosemary
  • 2 tbsp water
  • 1 egg white
  • 1 tbsp olive oil
  • 1/4 tsp coconut oil
  • Guacamole or dip of your choice

INSTRUCTIONS

  1. Preheat oven to 350F
  2. Combine almond meal, salt and rosemary in a medium mixing bowl
  3. In a small bowl mix water, egg white, olive oil and coconut oil
  4. Pour wet ingredients into dry and stir until you've created a dough
  5. Place dough between 2 sheets of parchment paper and roll flat, about an 1/8 inch thick
  6. Transfer to a baking sheet and remove the top piece of parchment paper
  7. Cut the sheet of dough into squares
  8. Bake for 10 minutes
  9. Let cool and serve with guacamole or dip of your choice
