Today I posted a picture of the no oats oatmeal that I had for breakfast and I quickly found out how much other paleo dieters miss this warm delicious breakfast treat.  I had seen some others posting about this phenomenon, and although I was quite skeptical about oatmeal without oats myself (because that just sounds crazy) I was also so intrigued that I had to give it a try immediately.  I went on a search for the perfect recipe and came across this one at Carrots 'N' Cake.  I'm not sure that she's the original creator of the no oats oatmeal, but she's definitely on to something with the ingredients she's chosen to include in her bowl!  I hope you enjoy it as much as I did.

  • 3 egg whites
  • 1/2 cup unsweetened almond milk
  • 1/4 cup chopped walnuts
  • 1 tbsp almond flour
  • 1/2 tbsp ground psyllium husk
  • 1 banana mashed
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Blueberries or fruit of your choice

  1. Whisk together egg whites and almond milk, then add in walnuts, almond flour and ground psyllium husk, banana, cinnamon and vanilla and mix well
  2. Pour the mixture into a sauce pan and cook over medium heat, stirring continuously.  It should only take a few minutes for it to reach an oatmeal like consistency
  3. Serve with blueberries or fruit of your choice
