I have a serious addiction to sweets!  And cookies!  And, well almost any dessert really.  I also lack self control when I start eating them, so although I have made these delicious treats to share with you, I would advice you not to make them as often as I do (although I'm not sure that I'm comfortable telling you how often that is) but also be sure to take them to parties because I guarantee they'll be a hit (and a much healthier option than many of other treats you'll find floating around the room).  And now that I've shared with you my hidden addiction, I would also like to let you know that starting tomorrow I'm going to give the Whole30 a go.  If you haven't heard about it you can check out their website Whole9, or read the book It Starts With Food.  I've decided to try it for a few reasons.  I really enjoy eating paleo, but I've never been 100% paleo 100% of the time.  And I don't plan on going 100% long term because I don't think it's realistic or sustainable, but I do think 30 days at it will teach me a lot about my diet and what works best for my body.  As you've seen above, I still struggle with sugar cravings, so I'm hoping to overcome that somewhat, and I'm also hoping to lose a little weight, gain energy and improve performance in my sport.  I'll let you know how I'm going with it over the next 30 days and be sure to post some of the great meals I eat.  And don't worry, although I won't be eating any paleo cookies and cakes during the next 30 days, I do have some up my sleeve I'll be sure to share with you guys!


  • 1 & 1/2 cups almond meal
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup honey
  • 2 tbsp coconut oil melted
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 cup dark chocolate chips


  1. Preheat oven to 350F
  2. In a medium bowl mix together almond meal, baking soda and salt
  3. In a small bowl mix together honey, coconut oil, egg and vanilla
  4. Then add the mixtures together and combine well, once combined mix in the chocolate chips
  5. Roll into small balls and press onto a baking sheet lined with parchment paper
  6. Bake for 13 minutes

Preparation time: 10 minutes | Cook time: 13 minutes | Number of Servings: 12 cookies
