Just a quick one tonight because I've been up late reading and I'm falling asleep in front of my computer.  This is a breakfast casserole I threw together the other morning full of healthy fats, carbs and protein so I hope you enjoy it.


  • 6 ounces chicken
  • 2 cups peeled zucchini, chopped
  • 1 onion, chopped
  • 6 eggs
  • 2 garlic cloves, minced
  • 2 tsp fresh basil, minced
  • 1/4 cup fresh parsley, minced
  • Salt and pepper


  1. Preheat oven to 350F
  2. In a large skillet cook the chicken, then add in the zucchini, onion and garlic and leave to sauté
  3. In a bowl mix the eggs, basil, parsley salt and pepper
  4. When the chicken and vegetables are done cooking add them to the egg mixture and combine well
  5. Pour into a greased baking dish and bake for 30 minutes
