ALMOND MILK LATTE

My whole30 journey is going well so far and I really feel great today.  I do need to get a little bit better at prepping my meals though, so as I'm writing this I'm kind of in a hurry to get cooking and get to bed!  I thought I'd just give you a quick run down of what I ate in case any of you are interested in giving the program a try as well.  I'm trying to follow the whole30 program of 3 square meals a day, however I do need to eat something before I work out because I go straight from work to the gym.  I'm also trying to incorporate zone portions into my meals as best as possible.

Here is what my day looked like:

BREAKFAST

  • Breakfast scramble with 2 eggs, 2 ounces chicken, lots of mushrooms, 1/2 an onion and 1/4 of an avocado
  • 1/2 an apple
  • Black coffee

LUNCH

  • 4 ounces chicken with lots of broccoli
  • Salad with 1 & 1/2 tsp olive oil and some balsamic vinegar
  • 1/2 an apple

PRE WORKOUT SNACK

  • 1/2 an apple
  • 1 ounce turkey
  • 3 almonds

DINNER

  • Chicken curry made with 2 ounces chicken, 1 zucchini, 1/2 cup light coconut milk and green curry paste
  • Lots of cauliflower rice

Anyway, on to todays recipe.  Sorry it's a quick and easy one tonight, but as I mentioned I'm kinda short on time.  I also happen to be in love with the almond milk latte because it saved my life since going paleo!  Literally, I love lattes, and I hated giving them up, until I discovered this little wonder.

INGREDIENTS

  • 1 cup unsweetend almond milk
  • 1 shot of espresso
  • 1 tsp honey (optional)
  • Cinnamon for dusting (optional)

INSTRUCTIONS

  1. Warm the almond milk and honey, then froth
  2. Place espresso shot in a glass and pour in your almond milk
  3. Top with cinnamon
