BROCCOLI SALAD

I think my coach was trying to torture us tonight.  Literally.  On Monday we had to do the infamous "Fran" WOD and I about died!  I'd been out sick for two weeks prior to this and had this as my first WOD back...brutal right?  Well that's not the worst of it, tonight, only 4 days later, he posts a 1.2km run followed by a 14 minute latter consisting of 30kg thrusters and chest to bar pulls ups!  Needless to say I'm sore this week, but I guess I shouldn't complain, after two weeks off I was dying to get back.  Anyway, with that being said, I do appreciate my coach immensely, he's taught me so much in the past year that I've been training with him and tonights recipe is actually his famous broccoli salad.  We had a games day at the gym back in March and he served us a massive paleo feast afterwards. This was one of the dishes and it was so delicious!  Hope you enjoy it!

INGREDIENTS

  • 2 heads of broccoli, cut into florets
  • 4 carrots, peeled and chopped
  • 10 slices bacon
  • 1 onion, chopped
  • 4 eggs, boiled
  • 1/4 cup homemade mayonnaise
  • Salt and pepper

INSTRUCTIONS

  1. Preheat oven to 400F then place the carrots in a glass baking dish and roast for 15 minutes
  2. While that is cooking steam the broccoli for 4 minutes
  3. In a separate pan sauté the bacon and onion
  4. When everything's done cooking mix together with the boiled eggs and homemade mayonnaise, season with salt and pepper
  5. Serve cold
