Well I've come to a point in my whole30 zone challenge thing I've decided to put myself through that I really need some variety! I love the zucchini pasta so much because it goes great with veggies and any kind of protein, so I decided I needed to come up with a new sauce. Seeing as I wanted to make this zone compliant as well as paleo and Ashley complaint, I went on a hunt for some expert advice. I came across Hey, Joob! and have to say, she's a genius! This sauce is so simple and quick to whip up. Also, if you're following the zone diet, add an apple or some fruit for dessert and you've got yourself a perfect 3 block dinner for 2 people. Here's my take on the dish.

  • 4 zucchini, julienne peeled
  • 9 ounces shrimp
  • 1 can diced tomatoes
  • 1 avocado
  • 1/4 cup fresh basil
  • 2 tbsp water
  • Salt and pepper

  1. In a pan sauté the shrimp
  2. In a separate skillet cook the zucchini
  3. In a food processor blend the tomatoes, avocado, basil, water, salt and pepper
  4. Once everything is done cooking add the zucchini and sauce to the shrimp and mix until the sauce is heated
