PaleOMG is a genius!  She's like a paleo god.  Although I'm sure most of you already know that.  However, if by some strange chance you haven't been to her sight I'm not sure what you're waiting for, her recipes are to die for!  I'm posting this recipe for her carrot cake pancakes today because they are literally so freaking good!  I wish I had thought of this.  But I didn't.  She did.  I'm also posting this recipe as a sort of "going out with a bang" recipe because tomorrow I'm starting whole30 again.  Yes it's confession time, I've been cheating on whole30, and I really want to do it right, so I'm starting over tomorrow, August 1st.  If you'd like to join me that would be great!  I could use some additional motivation.  Plus, it's my birthday at the end of the month so of course I need to look good!  And to forget about how old I'm getting...


  • 1/2 cup almond meal
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup coconut milk
  • 1/4 cup walnuts, chopped
  • 2 tbsp coconut oil
  • 1 cup shredded carrots
  • 3 eggs
  • 1/4 cup raisins
  • Coconut flakes
  • Pure maple syrup
  • Chopped walnuts


  1. In a medium bowl combine almond meal, coconut flour, baking soda, salt, cinnamon and nutmeg
  2. In a separate bowl combine coconut milk, walnuts, coconut oil, carrots, eggs and raisins
  3. Add wet ingredients to dry ingredients and mix well
  4. Grease a pan with some coconut oil
  5. Pour batter on skillet (approximately 10 small pancakes) over low heat and brown both sides
  6. Top with coconut flakes, pure maple syrup and chopped walnuts
