EGG MUFFINS

Well I've joined back in on the whole30 bandwagon, since as I mentioned I failed last time.  Day 1 I was quickly reminded how important preparation is.  This morning I slept in, and then was so rushed to make breakfast and pack my lunch and snacks for the day.  So tonight I decided to make these egg muffins so they're quick and easy to grab in the morning!

INGREDIENTS

  • 6 eggs
  • 1 zucchini peeled and chopped
  • 1/4 jar sun dried tomatoes
  • 4 ounces minced beef
  • 1/2 onion chopped
  • Salt and pepper

INSTRUCTIONS

  1. Preheat oven to 350F
  2. In a pan sauté the onion and minced beef until the beef is cooked
  3. Remove from pan and combine with the remaining ingredients and whisk together
  4. Scoop the batter into a greased muffin tin
  5. Bake for 20 minutes
