RASPBERRY SCONES

A fellow instagrammer posted a photo of some raspberry scones he'd made and I immediately had to know how he made them!  He said they came from Paleo Diet Lifestyle's cookbook.  He gave me the recipe and said they have lots of great stuff, so be sure to check them out if you get a chance.  The flavour is delicious and if you have a chance to whip up some coconut cream (which is still on my to do list) I think they would go fabulous together.

INGREDIENTS

  • 2 cups almond meal
  • 1 cup raspberries
  • 2 tbsp honey
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp salt

INSTRUCTIONS

  1. Preheat oven to 375F
  2. In a bowl combine almond meal, raspberries, baking soda and salt
  3. In a separate bowl whisk together the egg and honey
  4. Slowly pour the egg mixture into the dry mixture stirring to combine
  5. Roll into balls and flatten the dough onto a parchment lined baking sheet
  6. Bake for 12 minutes
