Seeing as I've been living in Australia for over a year and a half now, I felt it was time to make a proper aussie treat.  I chose to start out with Anzac Biscuits, a staple on Anzac Day!  Unfortunately these absolutely delicious treats are packed full of grains, refined sugar and butter.  But lucky for me (and you) the healthy chef has come up with this great paleo version.  Here's my take on these yummy biscuits.


  • 1 cup almond meal
  • 1 cup sliced almonds
  • 1 cup desiccated coconut
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1/2 tsp baking soda
  • 1 tbsp water


  1. Preheat oven to 350F
  2. In a bowl combine the almond meal, sliced almonds and desiccated coconut
  3. In a sauce pan warm the maple syrup and coconut oil together
  4. Add the baking soda and water to the pot and keep stirring
  5. Pour the wet mixture into the dry mixture and stir until a dough forms
  6. Roll into balls, place on a parchment lined baking sheet and press down slightly to flatten them
  7. Bake for 30 minutes
