Happy Friday! My favourite day of the week.  Love kicking the weekend off. So I apologise for being on a bit of a dessert spree lately.  I made a lot of these a while back, and as I'm following whole30 right now, I can only dream about these delicious treats. Also, my diet has been a bit boring lately, I'm making large meals on the weekend and eating the same thing all week out of convenience and to keep me on track! I'm going to try to come up with some new whole30 meals this weekend though so hopefully I'll have some good stuff to share with you next week. This recipe is yet another from PaleOMG. I love making her recipes because I know they'll always turn out fantastic!


  • 1 sweet potato
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1/3 cup honey
  • 1/4 tsp vanilla
  • 1/2 cup dark chocolate chips
  • 3 tbsp coconut flour
  • 2 tbsp cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt


  1. Preheat oven to 425F
  2. Puncture the sweet potato with a fork several times and bake for 3o minutes
  3. Remove the sweet potato from the oven and reduce heat to 350F
  4. Peel the sweet potato and mash in a bowl
  5. Add the egg, coconut oil, honey and vanilla and mix well
  6. Add in all remaining ingredients and stir until thoroughly combined
  7. Pour into a greased baking dish
  8. Cook for 35 minutes
