DATE BARS
/Today I spent the day hanging out with crossfitters, eating heaps of paleo food and watching recaps of the olympic weightlifting. I know I'm weird, but I'm lucky to have weird friends who enjoy doing just the same thing on a Sunday afternoon. And wholly crap! Those women and men are freaking strong! I literally can't even figure out how they can possibly snatch and clean and jerk those weights! I mean some of those girls are tinier than me and lifting more than I can deadlift! It definitely didn't make me feel good about myself. But I still loved every minute of it. One of the desserts I made to share today were these date bars, and everyone loved them (well I assume they did, maybe they lied to make me feel better about myself because the Olympians made me look like I train with feathers on my bar).
INGREDIENTS
- 1 cup dates
- 1 & 1/2 cups walnuts
- 1/2 cup coconut chips
- 2 eggs
- 1 tbsp vanilla
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
INSTRUCTIONS
- Preheat oven to 350F
- In a food processor blend the dates and walnuts until they reach a grainy and crumbly consistency
- Add in the coconut chips, eggs, vanilla and salt and blend again until everything is well combined and smushed together
- Toss in the chocolate chips and fold them in with a spoon
- Spread the mixture out onto a parchment lined baking sheet
- Bake for 25 minutes
- Cut into squares and serve or wrap up individually and refrigerate to eat later
