Spicin' up my rice tonight!


  • 1 tbsp olive oil
  • 1 head cauliflower, chopped and blended in the food processor to a rice like consistency
  • 1 cup pork, cooked and chopped
  • 2 carrots, peeled and diced
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup coconut aminos
  • 2 eggs
  • Salt and pepper


  1. When you have all of the above ingredient prepared, heat the olive oil in a pan over medium heat and add the onions, carrots and garlic and cook until they start to become soft
  2. Add the blended cauliflower and cook thoroughly
  3. Next add the pork and coconut aminos and continue to sauté
  4. In a bowl crack the eggs and whisk, then add to the pan and stir for a few minutes until they are cooked
  5. Season with salt and pepper to taste
