Well only one more day to the weekend and four more days until my birthday! Oh man I'm getting old. That's all I have to share with you tonight. Hopefully this doesn't mean I'm becoming boring with old age. Oh, and this recipe came from the help of TIANA fair trade organics. I'm still mastering the cooking and baking with coconut flour thing and the recipes are their site are extremely helpful!


  • 1/2 cup coconut oil, melted
  • 1 cup coconut sugar
  • 4 eggs
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 1 cup coconut flour
  • 1 & 1/2 cups shredded coconut
  • 3/4 cup dark chocolate chips


  1. Preheat oven to 375F
  2. Mix together the coconut oil, coconut sugar, eggs, vanilla and salt
  3. Then stir in the coconut flour, shredded coconut and chocolate chips
  4. Shape into small balls and place on a parchment lined baking sheet
  5. Bake for 15 minutes
