BANANA MUFFINS
/Well I've had quite a lazy but lovely Saturday. The sun is finally shining and spring is just around the corner so I spent the day reading a book at the beach and soaking up the sun.
INGREDIENTS
- 1 & 1/2 cups almond meal
- 1 tbsp coconut flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 eggs
- 1/4 cup macadamia nut oil
- 1/4 cup honey
- 2 bananas, mashed
INSTRUCTIONS
- Preheat oven to 350F
- Line a muffin tin with paper liners
- In a large bowl mix together the almond meal, coconut flour, salt and baking soda
- In a sperate bowl mix together the eggs, oil, and honey, then add in the mashed bananas and mix well
- Combine the wet and dry ingredients
- Fill your muffin tin with the batter and bake for 20 minutes
