Well I've had quite a lazy but lovely Saturday. The sun is finally shining and spring is just around the corner so I spent the day reading a book at the beach and soaking up the sun.


  • 1 & 1/2 cups almond meal
  • 1 tbsp coconut flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 2 eggs
  • 1/4 cup macadamia nut oil
  • 1/4 cup honey
  • 2 bananas, mashed


  1. Preheat oven to 350F
  2. Line a muffin tin with paper liners
  3. In a large bowl mix together the almond meal, coconut flour, salt and baking soda
  4. In a sperate bowl mix together the eggs, oil, and honey, then add in the mashed bananas and mix well
  5. Combine the wet and dry ingredients
  6. Fill your muffin tin with the batter and bake for 20 minutes
