So this isn't anything too innovative, but seeing as I was making Coconut Shrimp tonight and just had the bag of shredded coconut lying out, I though, yum, how good would that be toasted on some berries for dessert!
- 1 bag shredded coconut or coconut flakes
- Preheat oven to 350F
- Pour shredded coconut onto a baking sheet
- Bake for 10-15 minutes stirring every 5 minutes until golden brown
- Use on top of berries, cupcakes, ice cream, in trail mix, whatever you like!
