Well today was a lovely day but much less productive than yesterday. I slept in, had a few cups of coffee and strolled down to the beach for a bit. That was pretty much my whole morning. Then I took a jog over to my friends house to get a workout in and came back home to do some cooking. Tonight I put together this dairy free butter chicken. I'm loving Indian food over cauliflower rice right now!


  • 1 pound chicken, cubed
  • 1 tbsp olive oil
  • 1/2 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tsp fresh ginger
  • 1 tsp chili powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1/2 tsp cinnamon
  • Salt and pepper
  • 1 can coconut milk


  1. In a large pan heat the olive oil
  2. Add lemon juice and all spice to the pan and stir
  3. Add the chicken and mix around until it is completely coated with the spices
  4. Let sauté until the chicken is cooked
  5. Then add the coconut milk and let simmer for 15 minutes
  6. Serve over cauliflower rice
