Oh Monday Monday...just a normal old Monday. It was a special day on instagram though, I reached 10,000 followers! And since it's a good chance you're one of them thank you so much for your support. It means so much to me. You're the reason I keep experimenting in the kitchen and I hope you're enjoying my recipes.   • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp thyme
  • 1 tbsp basil
  • 1/2 tsp red pepper flakes
  • 2 cans peeled tomatoes
  • 2 cups vegetable stock
  • Salt and pepper
  • Fresh chopped basil for garnish


  1. Heat the oil in a pot over medium heat and add the onion and garlic
  2. When the onion becomes translucent add all remaining ingredients and bring to boil
  3. Reduce heat to low and cook for about 45 minutes
  4. In batches blend the soup in your food processor until it reaches your desired consistency
  5. Garnish with fresh chopped basil
