SHRIMP SALAD WITH CITRUS VINAIGRETTE

Last recipe before I head to bed. I have a crossfit competition in the morning so I need to get some rest! The recipe for the citrus vinaigrette came from whole living.

INGREDIENTS (Dressing)

  • 1/2 tsp cumin
  • 1/2 cup fresh squeezed orange juice
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 2 tsp dijon mustard
  • Salt and pepper

INGREDIENTS (Salad)

  • 4 ounces shrimp, cooked
  • 4 ounces squid, boiled
  • 1 jar or can of beets, drained and diced
  • 1 avocado, diced
  • 1 bag of mixed lettuce

INSTRUCTIONS

  1. Prepare the dressing by blending together all of the ingredients listed
  2. Combine all of the salad ingredients in a large bowl and pour in your  desired amount of dressing
  3. Toss to coat
