GARLIC MASHED CAULIFLOWER

Well I'm pretty sure I've injured myself from the Tough Mudder race we ran last weekend. I'm pretty bummed about it because it's really interfering with my training! It's my right ankle and it just kills to walk or run on. It started hurting a day and a half after the race which was strange, and I don't remember doing anything jarring to it so that sucks. I suppose I need to go see a doctor and get an x-ray, ugh! Anyway, that's my drama for today. I'll let you know how I go at the doctor. I've still been going to crossfit every night which is probably a stupid idea, but I hate missing days.

INGREDIENTS

  • 1 head cauliflower, washed and chopped into florets
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper

INSTRUCTIONS

  1. In a large pot bring water to boil and add the cauliflower
  2. Once the florets become very soft, drain the water and add the cauliflower to your food processor
  3. Add in the olive oil, garlic, salt and pepper
  4. Blend until smooth
