APPLE PIE

Well it's stormy here, and we have a lot of home grown apples that are going to go bad. So I decided to make an apple pie for my family. And since my family isn't paleo like I am I had to make sure it was really good! And this passed the test! Hope it's sunny wherever you are, and if it is then you can be sure I'm jealous.

Paleo Apple Pie

INGREDIENTS

For the crust:

  • 2/3 cup coconut flour
  • 1/2 cup almond meal
  • 2 tbsp coconut sugar
  • 1/4 tsp salt
  • 2 tbsp coconut oil
  • 2 eggs
  • 1/4 cup water

For the filling:

  • 6 tart apples peeled, cored and sliced
  • 3/4 cup coconut sugar
  • 2 tbsp coconut flour
  • 2 tsp cinnamon

For the topping:

  • 1 cup chopped walnuts
  • 1/2 cup almond meal
  • 1/2 cup coconut flour
  • 1/4 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon

INSTRUCTIONS

Crust:

  1. Preheat oven to 350F
  2. Combine the coconut flour, almond meal, coconut sugar and salt
  3. Next mix in the eggs and water
  4. Grease the bottom of a 9 & 1/2 inch pie pan and press the dough evenly into the bottom and sides
  5. Bake for about 15 minutes before adding the filling

Filling:

  1. Mix the apples with the coconut sugar, coconut flour and cinnamon
  2. Set aside to prepare your topping

Topping:

  1. Stir together the walnuts, almond meal, coconut flour, coconut oil, coconut sugar and cinnamon
  2. Remove the crust from the oven, add your filling, then crumble your topping over the apples
  3. Bake for approximately 45 minutes
