I'm back! Have you missed me? Sorry, that was a silly question. I know you have! I think I've been going through seasonal depression (caused by a year long winter) or potentially reverse culture shock after moving home from Australia. Either way I'm not sure what the heck I've been doing for the past two months, but I definitely haven't been blogging enough. I know most of you follow me on instagram though so you knew I was still alive. And if you don't follow me on instagram then I'm sure you've been extremely worried about me. Rest assured I'm okay. I wish I had more to tell you. I have been crossfitting A LOT! I'm training with the one and only Gabe Subry right now and if you know crossfit you might know him. I'm pretty sure he's determined to kill me though. My workouts are all around 3 hours at the moment, and I'll go out on a limb here and say I'm turning into a bit of a machine. Alright I have a long ways to go before I can call myself a "machine" but I'm working on it. And hopefully he doesn't read my blog posts because he probably wouldn't approve of these cookies I just made. But sometimes a girl needs her chocolate. Well for me it's more like all the time. I'm also working on a few other new things right now. Some cookbook reviews, paleo friendly food reviews and a health and fitness challenge with my sister. So stay tuned for that, it's going to be very exciting. If there's anything else you'd like to see from me just let me know. Alright now that you all know I'm alive and well I'll share this absolutely delicious recipe with you. This is a recipe I tried from ForeverFit and just died it was so good. I did add a little honey and coconut sugar because I had a major sweet tooth at the time of baking, but if you're trying to reduce your sugar intake then just exclude those. Also, if you're completely opposed to added sugars you could replace the chocolate chips for walnuts or dried fruit. It would still be delicious!

Banana and Chocolate Cookies

Servings 12 cookies


  • 2 bananas
  • 1/2 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1-2 tbsp honey (optional)
  • 1-2 tbsp coconut sugar (optional)
  • 2 eggs
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chunks


  1. Preheat oven to 350F
  2. Mash up the bananas with a fork
  3. Mix in the coconut flour, coconut oil, eggs, baking soda, salt and the honey and/or coconut sugar if using and stir until everything is combined
  4. Fold in the chocolate chunks
  5. Roll into balls and place on a parchment lined baking sheet and press down slightly to flatten
  6. Bake for approximately 25 minutes
