I have a serious addiction to chocolate. I'm just going to be honest and put that out there. I like my desserts smothered in it. And I just like to eat it by the handful. But it's an unhealthy habit. Sure a little dark chocolate is good for you, but I surpass the healthy amount when I get to eating it. So I wanted to come up with a dessert that was delicious and chocolate free! I love cookies, they're so simple and if you have self control (which is another thing I'm working on) you can just have a few and not feel guilty at all! So yea, that's the great news about these cookies, but I'm sure you want to know what's happening in my life as well. Don't you always? Well, I have a lot of free time to cook and blog right now, so that's a win win. And I also have a lot of time to train (which I know I've mentioned before). I have my first NorCal CrossFit competition coming up next weekend! I'm excited and nervous. It's the SacTown Throwdown and some of the biggest teams in NorCal will be there competing. I'm competing in a team with three others from my gym (Crossfit 209 Sport) who all kick ass. They're strong and fast, and the last thing I want to do is let them down, so I'm just killing myself (in a good way) at the gym right now to get my ass in shape for this. As my trainer often says these days, "get ready for your lungs to bleed today" doesn't sound pleasant does it? Well you're right it's not, but if gets me where I need to be I will be doing it every day! Okay not every day, 5 days a week. That's all I can handle. Alright, that's enough from me for one day. I'm going to go enjoy a cookie (or a few).

Cranberry Walnut Cookies

Servings 12 cookies


  • 1 & 1/2 cups almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup dried cranberries
  • 1/3 cup chopped walnuts


  1. Preheat oven to 375F
  2. Combine all ingredients and mix well
  3. Roll into balls and place on a parchment lined baking sheet
  4. Press down on each cookie slightly
  5. Bake for approximately 15 minutes
