Well it was officially day 1 of my 21 Day Sugar Detox and I'm on a high. Can every day be this easy? I have a feeling it won't be! But I'm going to soak up my day 1 accomplishment thats for sure. If you haven't already noticed I love my sweets, so its a difficult one for me to give up. But it also gets me feeling sluggish and I'm ready for a reset. So wish me luck, and join me if you want to kick your sugar and carb cravings too! With that being said I will be trying a lot of new meal recipes so I don't get bored and I keep my hands clear of the sweets. Also, the CrossFit NorCal regions are 15 weeks away and its time to get my body ready to kick butt when we make it. And to look good in the array of outfits my teammates are putting together for us. Ground Beef Stuffed Bell Peppers

Serves 4


  • 1/2 small onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup cauliflower, ground in a food processor to a rice like consistency
  • 1 tbsp Mrs Dash Southwest Chipotle Seasoning
  • 1 can tomato sauce
  • 2 cups cabbage, diced
  • 4 bell peppers, tops removed and seeds scooped out
  • Salt and pepper


  1. Preheat oven to 350F
  2. In a large skillet sauté the onion and garlic for a few minutes, then add in the ground beef and brown, drain off any fat
  3. Add the cauliflower, Mrs Dash, tomato sauce, cabbage salt and pepper and cook for about 10 minutes or until the cabbage is soft
  4. Place the bell peppers in a baking dish and scoop the mixture into each one, filling to the top, any excess meat can be cooked in the bottom of the dish
  5. Bake for approximately 40 minutes
