BAKED CHICKEN AND VEGETABLE FOIL PACKETS

I hope everyone had a great Memorial Day weekend. I was at the NorCal CrossFit Regional competition all weekend competing with my team and it was amazing. It was my first time competing at such a large event as well as my entire teams first time. We learned so much, met so many amazing and inspirational athletes and pushed ourselves to the limit. My sister spent the entire weekend with me and is seriously my biggest fan. I don't know what I would have done without her. She constantly told me how amazing I was, did whatever I needed to do and carried my cooler around for me. She's an up and coming crossfitter herself and I can't wait to see where she goes in this sport. My parents also came out to watch me which was probably the highlight of the weekend for me. They'd never seen me do CrossFit before so it was so cool to show them what I do. I'm sure they had a lot to do with how hard I worked out on the field as well. I could hear them cheering for me along with the CrossFit 209 Sport team and it was just so amazing to have so much support. My new home CrossFit Pleasanton came out to support me as well along with tons of friends. I seriously couldn't have asked for a better weekend. Some highlights for me were overhead squatting 165 pounds 3 times, anchoring my team on a couple workouts and not falling from the rope during rope climbs. Seriously that was big for me! It's bittersweet now that it's over. I can relax a bit, but at the same time I'm ready to get after it for next year. I want to come back faster and stronger. Competing on a team was an experience I'll never forget, but I'm debating competing as an individual next year and those girls are on a whole different level. We shall see how it goes!

Baked Chicken and Vegetable Foil Packets

Serves 4

INGREDIENTS

  • 4 chicken breasts
  • 2 sweet potatoes, peeled and diced
  • 1 cup chopped carrots
  • 2 cups broccoli
  • 1 cup diced cherry tomatoes
  • 1/4 cup Tessemaes lemon garlic sauce
  • Salt and pepper
  • Foil sheets

INSTRUCTIONS

  1. Preheat oven to 400F
  2. Prepare 8 square foil sheets, approx. 12"x12"
  3. Spray 4 foil sheets with olive oil spray and place one chicken breast on each
  4. Then top each chicken breast with vegetables
  5. Drizzle with lemon garlic sauce and season with salt and pepper
  6. Place 1 foil sheet on top of each packet and seal the edges so that nothing can leek out
  7. Place the packets on a baking sheet and cook for 30 minutes
  8. Remove carefully and serve
