Grain Free Cinnamon Granola

I just love granola! It's one of my favorite things. I also love it on yogurt, although I prefer to eat dairy free as much as possible. So when I came across some almond milk yogurt at Whole Foods recently I knew I needed to make some yummy grain free granola to go with it!

This recipe is so simple and SO GOOD! I took some to my mom to try and she loved it. So much so that she said I should make a bunch for Christmas presents. Bag it up nice and cute and give it away as a gift. So, that's what I think I'll do! If you're looking for an easy food gift to make that everyone can enjoy, I've got you covered, this one's a hit!

Grain Free Cinnamon Granola

Servings: 5 cups

INGREDIENTS

  • 1 cup chopped almonds
  • 1/2 cup slivered almonds
  • 1 cup walnut pieces
  • 1 cup pecan halves
  • 1/2 cup shredded coconut
  • 3/4 cup sunflower seeds
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup maple syrup
  • 3 tbsp coconut oil

INSTRUCTIONS

  1. Preheat oven to 350F
  2. In a large bowl mix together the almonds, walnuts, pecans, shredded coconut, sunflower seeds, coconut sugar, cinnamon and salt
  3. In small sauce pan over low heat, warm the maple syrup and coconut oil
  4. Pour the maple syrup and coconut oil over the dry ingredients and mix 
  5. Pour the granola onto a large baking sheet and bake for approximately 25 minutes, stirring halfway through
  6. Be sure to check the granola towards the end, you want it browned but not burnt
  7. Let cool before serving
