Nothing too glamours here. I just wanted to share some quick and simple paleo breakfasts that I often make. I love breakfast. It's probably my favorite meal of the day. But I don't want to spend a ton of time cooking in the morning or prepping things the night before. Call me lazy. I don't mind. I still find ways to make healthy, delicious food every morning! My only requirements are quick and balanced. I want meals that give me energy for my day and include a good balance of carbs, fat and protein. Here you go!
Poached egg over sweet potatoes and brussels sprouts
A very simple dish of sautéed sweet potatoes and brussels sprouts topped with a poached egg. I sauté the sweet potatoes and shaved brussels sprouts in a pan with a little olive oil over medium heat. I put a lid on the pan so they cook quickly.
For the poached egg simply bring about 2 inches of water to boil, reduce to a simmer and add a dash of vinegar. Crack your egg into a shallow dish or cup. Stir the water with a spoon to create a whirlpool, then place the egg into the pot. Cook for approximately 3-4 minutes and remove with a slotted spoon.

This waffle is delicious and really easy to make! I even have a recipe for a single serving here. Then top with any leftovers you have in the fridge! I had some roasted turkey, a baked sweet potato and I sliced up an avocado and fried an egg.

I make a lot of one pan breakfast skillets in the morning because it's easy and quick. For this recipe I simply chopped up half a sweet potato and cooked it in a little bit of olive oil in a pan over medium heat (cover with a lid to cook the sweet potatoes quickly). Then I added in some chopped up onions, broccoli and sausage and covered again to cook. In a bowl I whisked together 1 egg + 3 egg whites and poured that over my vegetables, stirring until cooked. I topped the dish with avocado and hot sauce.
This is one of my favorite recipes, simply because these are like my 4 favorite foods! Get the recipe here. Baking the potato in the morning would take a lot of time, so I often just microwave one. Simply pierce the potato a few times with a fork and microwave for 5-8 minutes, rotating halfway through.
I love this recipe because it's simple and sometimes it's nice to try something different and new! There are no oats in this "oatmeal" but it has a similar consistency and it's delicious! You can get the recipe here. Then top it with whatever you like. Nuts, coconut, fruit. Or maybe a little honey if you'd like it a little sweeter.
Sautéed vegetables with sausage and fried eggs
This type of dish is a pretty common go to for me. I start by chopping up a sweet potato. I add a little olive oil to a pan over medium heat and add the potato. Then I put a lid on the pan so the sweet potatoes cook really fast. Then you can literally add any vegetables that you like! In this photo I've added red bell pepper, onions and baby kale. Sometimes I add shaved brussels sprouts, asparagus, mushrooms, spinach, broccoli, cauliflower, squash, etc. Add in a little ground meat or chopped up sausage, maybe some egg white. And then top with 1 or 2 eggs.
