Beef Stew

It's St Patricks Day tomorrow and all I could think about was a good hearty stew. A more traditional Irish stew would have lamb meat in it, and you can easily substitute lamb in this recipe, but I had some beef stew meat at home so that's what I used.

This recipe is so easy and so good. You just chop everything up, throw it in a pot, and let it cook. That's my kind of recipe. If you've been craving a good soup or stew then this is it. Enjoy. And happy St Patricks Day!

Beef Stew

  • 1 and 1/2 pounds stew beef
  • 5 carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 sweet potatoes, cut in 2" chunks
  • 1 and 1/2 cups chicken stock
  • 1 and 1/2 cups water
  • Salt and pepper
  • Fresh thyme


  1. Season the stew beef with salt and pepper
  2. Add the stew beef to a large heavy bottomed soup pot and cook over medium heat, browning both sides
  3. Transfer the beef to a plate
  4. Add the carrots, onions and garlic to the pot
  5. Place the meat on top of the vegetables, then layer the sweet potatoes on top
  6. Pour in the chicken stock and water and bring to boil
  7. Reduce to medium heat, cover, and cook for an hour
  8. Season with salt, pepper and fresh thyme
