Mini Breakfast Pizzas

I came up with this recipe the morning after I made my Beef Burgers with Cilantro Avocado Mayo. I had made a batch of Zen Belly's Brioche Burger Buns from her Everything Dough ebook (which are by far the best bread rolls I've made) and I had one leftover. I baked everything right on top of the bun and the crust turned out nice and crunchy. It was delicious.

You can make the crust ahead of time, but you don't have to! Both options are in the directions below.

Mini Breakfast Pizzas

INGREDIENTS

  • 1 brioche burger bun
  • 1/4 cup tomato sauce
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 pieces of sausage
  • 2 eggs
  • Toppings: arugula and green onions

INSTRUCTIONS

  1. Preheat oven to 375F
  2. If you have a pre made brioche burger bun, cut it in half and place on a parchment lined baking sheet with the sliced side face up
  3. If you're going to prep your brioche burger buns now, make them a bit flatter (so that they're already in the shape of a pizza crust and you don't need to cut them in half), precook for approximately 10 minutes, then continue with the following directions
  4. In a bowl combine the tomato sauce, Italian seasoning, salt and pepper
  5. Spread the tomato sauce on each piece of crust, almost to the edge
  6. Chop the sausage into small pieces and layer on top of the sauce
  7. Carefully crack one egg on each pizza
  8. Bake for approximately 15 minutes
