Mini Donuts

Every once in a while I get a craving for something sweet. Okay who am I kidding, I get a craving for something sweet all of the time. And recently I had a craving for donuts. I have this cute little mini donut pan, you know, because if they're mini you won't eat as much right? That's also false. Especially when you get crazy in the kitchen and make a dozen different flavors and feel the need to try one of each. But I promise if you make these for a party they'll be a hit! Not all of the toppings below are paleo, but I have plenty of paleo options for you to enjoy if that's what you choose! 

Mini Donuts

Servings: 36 mini donuts

INGREDIENTS

  • 1 cup almond flour
  • 1/2 cup cassava flour
  • 1/2 cup potato starch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut sugar
  • 1 egg + 1 egg yolk
  • 3/4 cup full fat coconut milk
  • 1/3 cup coconut oil, melted
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350F
  2. In a large bowl combine the almond flour, cassava flour, potato starch, baking soda, baking powder and salt
  3. In a medium bowl whisk together the coconut sugar, eggs, coconut milk, coconut oil and vanilla extract
  4. Pour the wet ingredients into the dry ingredients and fold until combined
  5. Spoon the batter into a strong ziplock bag and cut a corner
  6. Spray a mini donut pan with cooking spray and pipe the batter into the donut pan
  7. Fill each circle fairly well, they won’t rise too much
  8. Bake for about 8 minutes (if you’re using a regular donut pan you’ll need to bake them longer, around 12 minutes)
  9. Cool on a wire rack before frosting. 
  10. Below are the 4 glazes I made to frost these donuts. Just combine the ingredients in a bowl, dip the donuts in the glaze and then immediately in whatever toppings you’d like. If the glaze hardens you can heat it in the microwave for a few seconds to soften it up for dipping.

Sugar Glaze
3/4 cup powdered sugar
2 tbsp almond milk

Chocolate Glaze
3/4 cup powdered sugar
2 tbsp cocoa powder
2 1/2 tbsp almond milk

Maple Glaze
3/4 cup powdered sugar
1 tbsp almond milk
1 tbsp maple syrup
1/4 tsp vanilla extract

Pomegranate Glaze
3/4 cup powdered sugar
2 tbsp pomegranate juice

Paleo Glaze Option
I used a powdered sugar glaze for these donuts because it hardens nicely and it's easy to work with. If you would like a paleo option use this recipe:
1/4 cup melted coconut oil
1/4 cup honey
1/4 cup almond milk
