Cauliflower Tabouleh Salad

I was grabbing a quick lunch from the Whole Foods salad bar a few weeks ago and they had a salad I hadn't seen before. It was a cauliflower tabouleh. I love trying their salads. One of my favorites is their kale and avocado salad. I wasn't too sure about this one, but I went with it and and grabbed some grilled chicken thighs to go with it. Then I sat down with a kombucha and dug in. And OH MY GOODNESS it was SO GOOD! So much flavor. I think it was all the fresh herbs, the parsley and mint, that gave it such a powerful and delicious flavor. So today, when I looked in my fridge and saw a bag of cauliflower rice, I decided I needed to make it. And if you're wondering what "cauliflower rice" is, it's just the lazy version of chopping up your own cauliflower. And I'll admit, I love it! It's so convenient. I'm always sautéing cauliflower rice to go with my dishes so I love having it on hand. You can find it in the produce section of most grocery stores with the other pre chopped and bagged vegetables. 

Cauliflower Tabouleh Salad

  • 2 cups finely chopped cauliflower (pulse in a food processor but don't puree)
  • 1 cup diced tomatoes
  • 1 cucumber, peeled and diced
  • 1/2 cup chopped green onion
  • 3/4 cup finely chopped fresh parsley
  • 1/3 cup finely chopped fresh mint
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • Salt and pepper to taste


  1. Add all ingredients to a large bowl and toss to combine
