I recently started working for Black Iron Nutrition as a sports nutrition coach and every week we have a recipe challenge. This week was tacos! And since it's Tuesday and I love tacos, I had to participate. Taco Tuesday is literally my favorite day of the week! I'm also going to be totally honest here and admit that I didn't actually prep my own salmon tonight. I've been crazy busy lately and Trifecta System (a premade meal company) has been making a lot of my food for me and it's an absolute lifesaver! They do premade paleo meals, macro friendly meals, vegetarian meals and you can also just order precooked food in bulk. I had some precooked salmon so I decided that tonight would be salmon taco night. If you want to get some precooked salmon for this meal, go for it! I love tostones. They're delicious. They're crunchy and they remind me of a better version of chips. But I don't eat out that much so I rarely have them. I was looking at some green plantains at the grocery store the other day and suddenly I found myself buying them and dreaming about making tostones when I got home. I wanted to make some sauces to go with them and then I decided I'd add a little protein via shrimp and the next thing I knew I had this beautiful appetizer. I will be making these for any and every party I'm invited to because they turned out better than I even imagined. And don't be intimidated, they're actually super easy to make.

I absolutely love Chinese food, but I rarely go out to eat it because most of it isn't that healthy, it's loaded with sodium, and my body isn't too happy with me after I've eaten it. Growing up we would get to order takeout every once in a while as a treat. We have a few really good Chinese restaurants in my tiny town and sometimes on the weekends we would order a bunch and have leftovers for a few days. It was always so delicious. Orange chicken was always one of my favorites, so I wanted to make a healthier version. I served it over white rice to make a great post workout meal, but you can also serve it over cauliflower rice.

I just got home from an awesome weekend down in Carson, CA at the CrossFit Games. It was a blast. I stayed with the FitAID team, a sponsor of mine, in a really cool house in Palos Verdes. It was a beautiful home up on a hill and there were about 20 of us staying there. They hired a chef to make us dinner every night which was so great. The first night he made spaghetti squash with ground beef and chicken with a coconut curry sauce. Night two was chicken and steak fajita night. And on the last evening he made barbecued chicken and ribs with asparagus and corn on the cob. It was all so so good!

I'm always looking for quick, easy and tasty protein options. In addition to eating a paleo diet I also track my macronutrients. Eating the right balance of protein, carbs and fat helps to fuel my training, aid in my recovery and promote overall health. As an athlete this is so important to me! I find that carbs and fat are pretty easy to come by. Fruit, vegetables, avocados, nuts, etc. can all be eaten raw. But getting the right amount of protein every day is the most important thing and I hate being caught off guard.

Oh hey there! I'm glad you could stop by to enjoy these beautiful lemon chicken skewers. I made them last week after picking an abundance of lemons from our tree. I was trying to think up all sorts of ways to use them. I have a few other ideas, but this was the first thing that came to mine. I'm all about my barbecue right now. It's been insanely hot the past week. One day we hit 106F! So rather than heat up the house I just go outside and light up the grill. Plus the barbecue really does make everything taste better.

I've had a craving for pizza lately and I wanted to make something that I wouldn't feel guilty eating all of the time with good macros and delicious flavor. I was shopping at the farmers market in Midtown Sacramento last week and they had some really good looking zucchini and I thought that would be fun to use as a vegetable crust base! Most of the zucchini crusts I've seen use cheese to bind it together, but I don't like cheese and I also wanted it to be dairy free. So I played around with a starchy gluten free flour (cassava) and egg whites and it turned out soooo good! I topped it with some asparagus, peppers, spinach and eggs that I bought while I was at the market and bacon of course.
