Tostones with Grilled Shrimp, Creamy Chimichurri and Mango Salsa

Tostones with Grilled Shrimp, Creamy Chimichurri and Mango Salsa

I love tostones. They're delicious. They're crunchy and they remind me of a better version of chips. But I don't eat out that much so I rarely have them. I was looking at some green plantains at the grocery store the other day and suddenly I found myself buying them and dreaming about making tostones when I got home. I wanted to make some sauces to go with them and then I decided I'd add a little protein via shrimp and the next thing I knew I had this beautiful appetizer. I will be making these for any and every party I'm invited to because they turned out better than I even imagined. And don't be intimidated, they're actually super easy to make.

Root Vegetable Fries

Root Vegetable Fries

I love fries. So much so that I could eat my entire daily allotment of carbs in one sitting. They're just so tasty and addicting. And they go great with everything. When I was walking through the produce section of the grocery store the other day and looking at all the beautiful vegetables, I decided I wanted to try something new. A vegetable that I'd never tried before. I picked up a rutabaga first. I knew very little about rutabaga. I'd never eat one before. I just knew that it was a root vegetable and in comparison to potatoes it had very little carbohydrates. By no means am I a carbaphobe though, I love my carbs, especially on intense training days they're so essential. But nevertheless I think it's nice to have some lower carb tasty vegetable options. On rest days I like to eat lower carb, higher fat, so having a treat like this will be perfect. And a variety of vegetables is always important.

How to Throw a Bacon Party + a Recipe for Candied Bacon

Yes you heard that right. A bacon party. Genius isn't it? If you want to throw the most epic party then it should probably be centered around the most epic food on the planet. And that's bacon. Everybody loves bacon. And if you don't love bacon, you must not be from this planet. Name one thing that doesn't go with bacon. Go ahead. Try. Anything? I didn't think so. It's kind of crazy how many things bacon goes with.

Sweet and Spicy Sriracha Slow Cooker Meatballs

Sweet and Spicy Sriracha Slow Cooker Meatballs

I’m just sitting here watching the super bowl and drinking wine with my grandma. And by super bowl I mean the commercials, and Lady Gaga, and the half time show. It only seemed appropriate though that I should make us some proper super bowl snacks to enjoy while we watch. So I put these meatballs in the crock pot this morning, and oh my goodness did they turn out delicious!

Breakfast Bruschetta on Sweet Potato Slices

Breakfast Bruschetta on Sweet Potato Slices

This recipe is inspired by The Charming Detroiter. I came across her blog recently and she had a post for the most incredible trio of non traditional bruschetta and I just wanted to devour them off of my computer screen. I had most of the ingredients she’d used in my house and I just wanted to make a simple paleo version. I decided to slice up and bake a sweet potato until it was a bit crispy, and then I topped it with all the tasty things I could come up with.

MINI BREAKFAST TARTS

MINI BREAKFAST TARTS

What a relaxing weekend. I'd been so busy with competitions and different events that I hadn't had a chance to just settle down and relax. I'll admit I'm not very good at that. I kept trying to find things to do and places to go, but I did chill out a little bit. Saturday I got to train with two of my favorite girls, Sara and Rose. We did some conditioning then enjoyed a nice lunch outside on the patio at Porters in Lodi. It's still 80 degrees here in California so I'm taking full advantage of it as long as possible. Winter and I aren't really friends. Then on Sunday I woke up and made these incredibly delicious breakfast tarts before heading up to Sacramento to watch some of my friends compete at the Women's Pro-Am Powerlifting competition. It was awesome! Maybe one of these days I'll sign up to compete at one. I need to suck less at deadlifting first though.

PALEO AVOCADO BACON SLIDERS

PALEO AVOCADO BACON SLIDERS

I love a quick and simple meal, and I love sharing. When I eat out my go to meal is a lettuce wrapped burger, but I thought, what would make a better bun then lettuce? Why not sweet potatoes! It's simple, easy, delicious and I've sized them for sharing at a party or as a snack between workouts.

SPICY CHICKEN NUGGETS WITH RANCH DRESSING

SPICY CHICKEN NUGGETS WITH RANCH DRESSING

It is officially day 4 of my 21 Day Sugar Detox. Say what?! Only day 4?! Wholly crap! That's how I feel about that. I mean seriously, for the past few months I feel like my life has just been flying by and I can't slow down time, and now, well now it feels like it's at a standstill. So there you go, if you're at a point in your life where you'd just like to slow things down, do a sugar detox. The days will feel much longer than they actually are. But seriously, this is hard. But I knew they would be when I started. Day 1 was awesome, day 2 was pretty good, but last night on day 3 I just wanted to raid the fridge for anything sweet. I mean anything! Normally I'd let myself have some dark chocolate, or dried fruit, and on occasion I would bake some paleo treats, but I seriously wanted anything sweet. Like an apple with almond butter was just screaming my name. But I prevailed and had my spaghetti squash with ground turkey and tomato sauce and went to bed like a good little girl. Am I going to be able to make it the whole 21 days though? It seems like a lifetime right now! Okay it's time to stop being such a baby. I know a lot of people have done the 21 Day Sugar Detox and been successful, and I deserve to be successful as well. I am having fun trying new recipes for lunch and dinner and hope their deliciousness keeps you on track as well should you decide to embark on a similar journey. I'm pretty excited to see what happens once I get past the cravings. I didn't sleep well the first 2 nights, but I slept better last night. And I already feel incredibly less sluggish and faster at the gym. I think it still might get worse before it gets better, but I'm ready to take it head on. So if you think you're tough enough then give it a go join me so we can support one another. Oh, and Happy Valentine's Day. I'm off to get a massage and bask in the sunshine, so excited it's going to be in the 70's today!

PALEO HUMMUS

PALEO HUMMUS

They say when life hands you lemons, make lemonade. Well I'm not saying I've been handed lemons, but I am in a bit of a life limbo at the moment. One of my favorite songs says "don't worry 'bout what you don't know, life's a dance you learn as you go." I know this is true, but the unknown can sure be frustrating. Do you believe in psychics? I wish I did, because I'd be all over that. Well maybe not. What if my future isn't so bright? Just kidding, it is, because those lemons are going to be the best lemonade you've ever tasted, and I'll be sure to blog the recipe for you when I make it. I guess what I'm trying to say is that no matter where you are in life, enjoy it, because you won't get this time back. Right now I absolutely love training and seeing what my body is capable of. And I also love cooking and blogging for you. So for now I might not have a boyfriend, I might not know where I want to live in this world, I might not know what career path I want to take, but I do know that I'm happy, and I know that you will continue to benefit from my trials and multiple errors in the kitchen, so if you do nothing else, just be sure to come back to my blog when you need something healthy and insanely delicious to eat!
