SWEET POTATO WAFFLES

Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. NUT BARS

I felt the need to share this recipe because they're incredibly delicious. That's reason enough right? My mom got me hooked on these nut bars that she used to buy at the grocery store (yes I ate store bought bars) until I realized they weren't the best thing for me to be eating and I needed to find a healthier alternative. I tried to tell myself they were okay, they're gluten free, and just a bunch of nuts stuck together, how bad can it be? Until I read the nutrition label and it said they were glued together with Sugar, Corn Syrup, Yellow Corn Flour and Corn Oil. Eek! So I came across this recipe from Deliciously Organic and decided to give it a shot. They were so good I made a batch for a friend who was helping me with some wrist and back issues during the CrossFit Open, and she loved them so much she made them for her friend as well. So yes, they're awesome. And I'm assuming that's all the convincing you needed right? Good, because I have to get back to work now. Enjoy!

I recently posted a recipe for Simple Date Balls because they were just that, simple! Simply blend some dates with a few other ingredients and you've got yourself a quick delicious treat. SIMPLE DATE BALLS

These are a nice quick treat. And if you're like me and love raw bars (larabars when I'm in the US and emma and tom's bars when I'm in Australia) then you'll love being able to make them on your own. Also, I've called these "simple" date balls because the ingredients in these ones are what I tend to always have on hand, but feel free to mix it up. You can use any nuts you like, add chocolate, coconut, different dried fruits, honey etc.

Well I haven't posted a recipe in a few days, apparently me on a sugar detox and strict zone/paleo diet = loss of creativity. Not that that's any excuse, I need to experiment with some new dishes. But in the meantime I thought I'd share these with you. I did not make them, I merely consumed multiple in one sitting because they were that good. My friend from the gym who brought them to our games day competition shared with me where he found the recipe and I feel it's my duty as a fellow cavewoman (I just pictured a cavewoman eating chocolate...okay so its a far stretch) that I spread the word of their greatness. Happy birthday to me! Ahh I've officially surpassed my quarter life, I feel old! A few of my friends have told me that 26 was their best year, but I reckon people just say that to make you feel better about getting older. I'm sure someone told me that last year when I turned 25. Well here's to a better year than the last (and when I turn 27 hopefully someone will tell me that's going to be my best year). Maybe I'm just like the quote "like a fine wine I get better with age". Is that how it goes? I think it's something like that. Anyway, hello, I'm 26 and this will be my best year yet! So to kick it off I've joined in on a 30 no sugar challenge my coach has outlined for us. Here's a link to The NoSugar Challenge if you're interested in participating. And if you are let me know, it would be great to have some fellow challengers. On top of my trainers suggestions I will be eating all Paleo food (of course) in Zone portions, and I will do my best to stick to what they've outline in that chart as "favourable" foods. I know this is going to be hard, but I also know I want to start 26 off with a bang, and what better way than by feeling really healthy and getting really fit?! And just in time for summer (I'm in Australia). So this recipe is quite delicious, and if you just exclude the chocolate it also works for the no sugar challenge. Feel free to make it either way that suits you!
