APRICOT BARS

Today was awesome, literally, winter isn't too bad in Sydney.  It was 20 degrees (celsius, which is like 70 farenheit).  My flatmate and I went down to a cafe for brunch and then took a stroll to the beach.  I'm anxiously awaiting summer though, I can't wait to be sunbaking again!  Then we came home, put on the Olympics, and I tried out some new recipes.  These apricot bars were a recipe from Elana's Pantry that I pinned a while back and have been meaning to try.  They turned out delicious!  Although I don't expect much less from Elana, she's like my idol.  Here's the recipe, they're great to cut up into squares, wrap in plastic and toss in the fridge for snacks on the run.  Enjoy!
