PALEO AVOCADO BACON SLIDERS

PALEO AVOCADO BACON SLIDERS

I love a quick and simple meal, and I love sharing. When I eat out my go to meal is a lettuce wrapped burger, but I thought, what would make a better bun then lettuce? Why not sweet potatoes! It's simple, easy, delicious and I've sized them for sharing at a party or as a snack between workouts.

AVOCADO AND SUNDRIED TOMATO STUFFED BURGERS

AVOCADO AND SUNDRIED TOMATO STUFFED BURGERS

Happy hump day. And I'm not just celebrating Wednesday, I'm almost at the halfway point of my 21 Day Sugar Detox. Which is reason in itself to celebrate right? I'll be honest I gave in and stepped on the scale this morning. I was going to wait the whole 21 days before I did it, but I couldn't help myself. And disappointingly I'd only lost a couple pounds, which isn't bad, but I guess I was hoping for a little bit more. I have had 3 people today ask me "wow you've lost weight haven't you?" so I need to remember it's not all about the number on the scale. I have a feeling in the past few months I've lost a lot of fat, but gained a lot of muscle. So the number on the scale might not reflect my hard work, but the compliments sure do. I guess the moral of my rant is to not get down if the number on the scale doesn't budge too much. Especially if you exercise and lift weights a lot. If I get the guts maybe I'll post some before and after photos. And if you're doing a detox or a whole30 or a paleo challenge, be sure to take some photos of yourself as well. You might have major scale movement and you might not, but photos never lie! And continuing with my quest to make delicious 21 Day Sugar Detox approved recipes I made this one from Caveman Feast, one of my favorite paleo recipe ebooks from Civilized Caveman. Hope you enjoy it!

MEXICAN MEATZA

MEXICAN MEATZA

Well my days in Australia are dwindling. Only 3 days left. I'm getting pretty sad. Yesterday my friends from the gym threw me a going away picnic at the Royal Botanic Gardens in Sydney. It was absolutely amazing. There were about 20 of us, and they surprised me by all bringing a dish from my blog! How cool is that?! They're seriously such an awesome group of people and friends and I'm going to miss them so much. That's one thing about crossfit, it's such an awesome community, but it makes leaving that much harder. Hopefully I can convince a few of them to come visit me in California though!

AVOCADO AND MANGO SALAD WITH ORANGE VINAIGRETTE

AVOCADO AND MANGO SALAD WITH ORANGE VINAIGRETTE

This is a yummy salad that my mom made when I was visiting home last. It was so tasty I had to share the recipe. The only issue is that the vinaigrette was made with passion fruit juice concentrate, and I had a look at the label and its full of added sweeteners. I've made it again with orange juice concentrate (which still might be a little iffy for a stick paleo follower) but at least there aren't any added sugars. Be sure to check the label when you buy yours, and feel free to try it with fresh squeezed orange juice and let me know how it turns out! This recipe is modified from epicurious.

CHICKEN FAJITA SALAD

CHICKEN FAJITA SALAD

Tonights post is more of a meal than a recipe (since I've posted the recipes for all of the components of this salad in the past) but it's super healthy, super paleo, and a great meal for anyone following whole30 like I am right now.  I'm only on day 3 and can tell I'm doomed for failure unless I come up with some new and exciting dishes!  So throw this together and pretend like you just got take away from Chipotle and devour it!

CREAMY ZUCCHINI PASTA WITH SHRIMP

CREAMY ZUCCHINI PASTA WITH SHRIMP

Well I've come to a point in my whole30 zone challenge thing I've decided to put myself through that I really need some variety! I love the zucchini pasta so much because it goes great with veggies and any kind of protein, so I decided I needed to come up with a new sauce. Seeing as I wanted to make this zone compliant as well as paleo and Ashley complaint, I went on a hunt for some expert advice. I came across Hey, Joob! and have to say, she's a genius! This sauce is so simple and quick to whip up. Also, if you're following the zone diet, add an apple or some fruit for dessert and you've got yourself a perfect 3 block dinner for 2 people. Here's my take on the dish.

GUACAMOLE

GUACAMOLE

Today I started the Whole30 and I'll be completely honest, it was hard.  And I will quickly tell you why.  For starters, I'm pretty used to snacking throughout my day, and as part of the Whole30 they recommend you stick to 3 square meals.  Skipping my afternoon larabar and handful of almonds was tough.  My sugar craving also set in in the evening, and although I'd had a pretty filling dinner, I couldn't seem to get the need for a sweet treat off my mind.  Because I'm determined to stick with the program for the full 30 days I settled for a small fruit salad.  If any of you guys have done the Whole30 program and have any tips please let me know!  With that being said, tonights recipe is just a simple guac because I recently posted a recipe for paleo herb crackers and this just goes absolutely perfect with them.

EGG SCRAMBLE WITH FRUIT SALAD

EGG SCRAMBLE WITH FRUIT SALAD

Hello and welcome to my blog!  Obviously I'm new at this so I hope I keep you entertained enough to keep coming back. I've decided to start this site to share my paleo recipes and cooking experiments with you. I started eating paleo about 4 months ago with some teammates at my crossfit gym and absolutely loved it. Actually I take that back, it was a struggle at first, but once I started trying new recipes and experimenting with new ingredients it became easier and easier and I began to feel so much better! My training improved, I lost weight and gained energy. So here goes my first post, egg scramble with fruit salad. Nice and simple, but you'll find I'm a lover of a good breakfast and hope you are too!
