MINI BREAKFAST TARTS

What a relaxing weekend. I'd been so busy with competitions and different events that I hadn't had a chance to just settle down and relax. I'll admit I'm not very good at that. I kept trying to find things to do and places to go, but I did chill out a little bit. Saturday I got to train with two of my favorite girls, Sara and Rose. We did some conditioning then enjoyed a nice lunch outside on the patio at Porters in Lodi. It's still 80 degrees here in California so I'm taking full advantage of it as long as possible. Winter and I aren't really friends. Then on Sunday I woke up and made these incredibly delicious breakfast tarts before heading up to Sacramento to watch some of my friends compete at the Women's Pro-Am Powerlifting competition. It was awesome! Maybe one of these days I'll sign up to compete at one. I need to suck less at deadlifting first though.

I'm just about to head out for a competition in Reno this weekend. It will be my first individual competition which is nerve racking but also quite exciting! But before I do I had to share this recipe with you. I stumbled upon Real Food By Dad this week and boy does he make some incredible dishes! They aren't paleo, but his photographs are mouth watering. One of his posts is a series of stuffed baked potatoes and I decided to make something quite similar with a sweet potato. This will certainly be my new go to brunch. It's delicious and filling and perfect for a Sunday morning.

BACON, SPINACH and TOMATO QUICHE

Some big changes are happening in my neck of the woods, and the first of them is my attempt to take less crappy pictures. I still have a lot of work to do, and until I buy a new camera, my iPhone will have to do. I've also made some big career moves (aka I quit my job) to focus on training and my blog. Clinton Kelly made a comment that really hit home for me, he said "I realized this week that I just cannot do it all, so I will choose to to do what I can fabulously." I have a tendency to take on more then I can handle, and there are so many things I want to do with my life, but there are a few things I'm extremely passionate about and that I want to be exceptional at. I've decided to focus my energy on being the absolute best at those things; the things I love, the things I'm good at, and the things that spark my passion and excitement. I'm excited for the future and for new challenges. I'm excited to share simple healthy recipes here, and to see what my body is truly capable of achieving in the sport of fitness. This weekend I'll be competing at the NorCal CrossFit Regional with my team Caffeine and Kilos, and two weeks later I'll give my best shot at the second round combine of the National Pro Fitness League in Las Vegas. Stay tuned for updates, and remember, sometimes it's scary to take a chance, to risk it all, but in the end, where's the fun in playing it safe? Alright, on to the recipe! I wanted to share a breakfast dish that you could make ahead and enjoy in a hurry. We all get busy and it's nice to have healthy options to keep us on track with our goals. Make this in the morning and keep it in the fridge to grab during the week.

I'm really excited to share this recipe and guest post from Bob, the blogger and owner of Not So Fast Food. He's got some incredible recipes, but he was generous enough to share this epic one with me. He also has a Paleo food truck, which is pretty awesome. I think I need to plan a trip down to San Diego to try it out. Anyone want to come along? Here's a little message from Bob before he shares this delicious recipe with us: Did I say Bacon, Chocolate Chip Cookies?!?!?! You betta believe it! I mean...what's not to love here? I combined two of everyone's favorites! BACON & Chocolate Chip Cookies. The craze of the past few years has been the combination of Bacon & Chocolate and I get why! It's FREAKING delicious!!!!!! One dilemma I have on my Primal lifestyle is my sweet tooth.....I absolutely love chocolate. Gummi Bears are my other kryptonite, but, I don't have them very often anymore. Chocolate though, I can't get enough of a delicious piece of dark chocolate, especially with Coconut. Better get ready for A LOT of Chocolate desserts on this Blog. The baking time for the cookies will depend on the size you make them. I aim for a good sized tablespoon of dough!

BACON WRAPPED EGGS WITH SWEET POTATO HASH

Another recipe from my photo stream, luckily I have some instagram recipes to follow up on as I'm in Melbourne for one more night tonight. And speaking of Melbourne, I had such a great evening tonight. When I finished work I wandered around the city for a couple hours and was amazed by how much I was able to see in such a short period of time. I strolled along Southbank and saw the cutest cafe underneath a bridge, which I will definitely be going to next time I'm here, and got to check out all the awesome graffiti on Hosier Lane and finished up walking down Collins street for some massive window shopping. I ended my evening tour at Crossfit CBD for an ass kicking workout and met some great crossfitters! And when I say ass kicking I'm not joking, their gym is literally on a roof top, so all of their runs begin and end with a run up and down 5 flights of stairs (I'm actually not sure if it's 5, but it's a lot! Maybe more). It's one of those things I'd probably complain about if I had to do it on a regular basis, but I'm actually jealous because if I had to do that as much as they do I'd be fit as! Just saying, don't go telling my coach we need to be running stairs or anything. With that being said, if you're in the CBD you should definitely go check them out. They're very welcoming and a great group of people to train with. They also eat paleo, so what's not to love? Now on to tonights recipe, which is so easy (I know that seems to be a theme with me) but I enjoy easy. And it's also delicious, so win win.

BROCCOLI SALAD

I think my coach was trying to torture us tonight.  Literally.  On Monday we had to do the infamous "Fran" WOD and I about died!  I'd been out sick for two weeks prior to this and had this as my first WOD back...brutal right?  Well that's not the worst of it, tonight, only 4 days later, he posts a 1.2km run followed by a 14 minute latter consisting of 30kg thrusters and chest to bar pulls ups!  Needless to say I'm sore this week, but I guess I shouldn't complain, after two weeks off I was dying to get back.  Anyway, with that being said, I do appreciate my coach immensely, he's taught me so much in the past year that I've been training with him and tonights recipe is actually his famous broccoli salad.  We had a games day at the gym back in March and he served us a massive paleo feast afterwards. This was one of the dishes and it was so delicious!  Hope you enjoy it!
