BUFFINS (aka Protein Muffins)

My baking skills were put to the test by my amazing but skeptical teammate Drew Canavero last week after I posted a picture of myself eating mass amounts of ribs. Why my eating ribs lead to me baking muffins for my team seems a bit strange, but Drew's a bit strange, so I guess it kind of makes sense. You might also be wondering why I would call someone both strange and amazing but he did help me snatch 170lbs, so he's not so bad. Okay I'm getting off topic here. So how did these buffins come about? Well Drew blackmailed me. I can't really explain that part any further, but he wanted rib muffins so I had to make them. I acted confident in my ability to produce delicious rib muffins, but inside I was a little worried. I'd never made a protein muffin before and I had no idea how to cook with protein, but I was determined to figure it out. I also procrastinated and was short on ingredients, so after I whipped these together I didn't even have enough to try them before I fed them to my guinea pigs. I just crossed my fingers and hoped for the best. I guess I got lucky because they were gobbled up before I knew it. I'll have to come prepared with more next time. I've come to the conclusion that life is confusing and decisions are hard to make. I'm sorry if I just blew your mind with this discovery. I'll hang on a second while you regroup. I read a quote the other day from Charles Bukowski that said "The problem with the world is that the intelligent people are full of doubts, while the stupid ones are full of confidence." This quote may be a bit extreme, but I'd like to think I'm fairly intelligent, yes I have my dumb moments, but I certainly doubt myself and my ability more then I should. What am I afraid of? Failing? Well, if we don't try, we'll certainly never succeed. I read another quote, likely on Pinterest because that's where I waste the majority of my time, that said "Ability is nothing without opportunity". Okay you're probably wondering what I'm rambling on about at this point, but basically, I've taken some risk in the past, leaving the corporate world to pursue my passion as a CrossFit trainer and athlete, which has also given me more time to focus on my blog and nutrition which I'm extremely passionate about.

Okay this might be one of the best things I've ever made, and unfortunately I can't take credit for it. I recently went to an event where Danielle Walker from Against All Grain was speaking and had the pleasure of meeting her and buying her new book. It's a stunning book full of delicious paleo recipes. This was the first recipe I decided to try out and it was amazing. I brought it to a Friendsgiving party and it was a hit! Honestly, this recipe is the real deal. I made a few adjustments based on the ingredients I had in my cupboard and it came out perfect. Hope you enjoy it. And be sure to eat a lot. I'd like to attribute the mass quantities I ate to the weight I've been picking up in training lately. What is that saying? Lift big, eat big.

2 INGREDIENT PANCAKES

How many times were you asked, "what do you want to be when you grow up?" I'm sure we've all been asked that question. Some of us know and pursue that passion, some of us know, but settle for something else, and some of us have no freaking clue. I think I was one of the no freaking clue people. So when I ventured off to college I spent the first year trying to figure it out, and when I still hadn't, I settled for a business degree because it seemed reasonable, realistic, and the classes were fairly easy. Having a business degree has been great, I've had some good jobs since college, made some good money, travelled and seen the world. I wouldn't ever trade it. But upon returning to California after spending two years in Australia, I wanted a fresh start. I wanted to make sure this time I didn't settle, this time it was about finding something I was passionate about. Sure it's important to make a decent living and to be able to support yourself and your family, but its equally important to enjoy what you do. I've spent my life in sports and have always loved nutrition, hence the blog, but it wasn't until now that I realized this is what I needed to do with my life. So I'm doing it. It's that simple. It's going to be a learning experience, and it's going to take time before I'm living comfortably again, but I'm happy, and I think that's the most important part. I just finished my first week of coaching and it was awesome. I'm programming workouts and meeting some amazing people who have the same passion I do. To continually improve their health and fitness. We all struggle with things in life, and I love being that person they come to to start their day, or to finish it off and I always strive to ensure they leave feeling stronger and better than they did the day before. So I made a joke on Instagram that I wouldn't share this recipe until I found my future husband. But then I realized you'd probably be waiting a very long time. So I'll just give it to you anyway. However, if you take advantage of this delicious recipe, you can pay me back by setting me up with any hot single men you might know. You know where to find me, all forms of social media are right there to the right, just chose one and contact me. I'll be waiting patiently. What else can I tell you? The crossfit open competition just started. I've been spending my days training like a beast, and my nights chillin' like a grandma in the hopes that I will be at least adequate against the insane athletes taking over this sport. Seriously, where are these monsters coming from? My life is the gym (hence why I need you to find me a boyfriend) and I still feel inadequate. And I really don't know what to expect with this first workout. I mean its 17 minutes of burpees and snatches! Okay, burpees and snatches? Fine. 17 minutes? Shoot me! I'm a sub 5 minute kind of WODer. Hopefully my inner beast will kick in and some bundled up form of endurance which I've still yet to find will magically appear. That would be ideal at least. Good luck if your competing in the open, or good job if you've already pushed yourself through this first WOD. You're an animal!

BANANA AND CHOCOLATE COOKIES

I'm back! Have you missed me? Sorry, that was a silly question. I know you have! I think I've been going through seasonal depression (caused by a year long winter) or potentially reverse culture shock after moving home from Australia. Either way I'm not sure what the heck I've been doing for the past two months, but I definitely haven't been blogging enough. I know most of you follow me on instagram though so you knew I was still alive. And if you don't follow me on instagram then I'm sure you've been extremely worried about me. Rest assured I'm okay. I wish I had more to tell you. I have been crossfitting A LOT! I'm training with the one and only Gabe Subry right now and if you know crossfit you might know him. I'm pretty sure he's determined to kill me though. My workouts are all around 3 hours at the moment, and I'll go out on a limb here and say I'm turning into a bit of a machine. Alright I have a long ways to go before I can call myself a "machine" but I'm working on it.

Happy birthday to me! Ahh I've officially surpassed my quarter life, I feel old! A few of my friends have told me that 26 was their best year, but I reckon people just say that to make you feel better about getting older. I'm sure someone told me that last year when I turned 25. Well here's to a better year than the last (and when I turn 27 hopefully someone will tell me that's going to be my best year). Maybe I'm just like the quote "like a fine wine I get better with age". Is that how it goes? I think it's something like that. Anyway, hello, I'm 26 and this will be my best year yet! So to kick it off I've joined in on a 30 no sugar challenge my coach has outlined for us. Here's a link to The NoSugar Challenge if you're interested in participating. And if you are let me know, it would be great to have some fellow challengers. On top of my trainers suggestions I will be eating all Paleo food (of course) in Zone portions, and I will do my best to stick to what they've outline in that chart as "favourable" foods. I know this is going to be hard, but I also know I want to start 26 off with a bang, and what better way than by feeling really healthy and getting really fit?! And just in time for summer (I'm in Australia). So this recipe is quite delicious, and if you just exclude the chocolate it also works for the no sugar challenge. Feel free to make it either way that suits you!

Today I got off work early, which is always nice!  So after a a little time at the beach (it's the middle of winter in Australia so I wasn't sunbaking, but luckily it was nice enough to get some sunshine) I went on a bit of a shopping spree at the grocery store and came home to watch the Olympics and experiment in the kitchen.  I'm still waiting on my flatmate to do some taste testing, but this weekend I'll be posting some new fun recipes!  Today's post is a quick smoothie that I came across from Multiply Delicious, she really makes some of the best sweet treats!

NO OATS OATMEAL

Today I posted a picture of the no oats oatmeal that I had for breakfast and I quickly found out how much other paleo dieters miss this warm delicious breakfast treat.  I had seen some others posting about this phenomenon, and although I was quite skeptical about oatmeal without oats myself (because that just sounds crazy) I was also so intrigued that I had to give it a try immediately.  I went on a search for the perfect recipe and came across this one at Carrots 'N' Cake.  I'm not sure that she's the original creator of the no oats oatmeal, but she's definitely on to something with the ingredients she's chosen to include in her bowl!  I hope you enjoy it as much as I did.
