SPICY CHICKEN TACOS WITH COCONUT FLOUR TORTILLAS

Day 7 of my 21 Day Sugar Detox baby! That's right, this is officially a PR for me, I've never made it longer than 5 days without sugar. And I've tried, several times I hate to admit. What's kept me on track? Probably the copious amounts of training I've been doing that keeps me busy at the gym and a lot of experimenting with new dishes like this one. Adding new flavors to my meals every day keeps things fun and exciting. I still have cravings though, and I'm still nervous that I could fail, but for now I will keep trucking along because I'm finally one third of the way to my goal. So that's that, now who's excited for the CrossFit open? Can you believe it's in less than 3 weeks?! I can't! I was sick this weekend so I've now had 4 days off in a row and I'm feeling extremely sluggish and crappy. I'm nervous for tomorrows workout, and I hear we're doing track work, the kind of stuff that kills me! It's gonna hurt thats for sure. Hopefully I can get my ass in good enough shape in these last few weeks though. I think the open is such a cool experience because you can literally compare yourself to every CrossFitter in the world. There aren't many opportunities to do that and I'm really excited to see how I stack up. If you're giving the competition a go, good luck and make sure you have fun while you're doing it! Also, be sure to make lots of paleo dishes to keep you fuelled and fired up.

Well it was officially day 1 of my 21 Day Sugar Detox and I'm on a high. Can every day be this easy? I have a feeling it won't be! But I'm going to soak up my day 1 accomplishment thats for sure. If you haven't already noticed I love my sweets, so its a difficult one for me to give up. But it also gets me feeling sluggish and I'm ready for a reset. So wish me luck, and join me if you want to kick your sugar and carb cravings too! With that being said I will be trying a lot of new meal recipes so I don't get bored and I keep my hands clear of the sweets. Also, the CrossFit NorCal regions are 15 weeks away and its time to get my body ready to kick butt when we make it. And to look good in the array of outfits my teammates are putting together for us. Well my days in Australia are dwindling. Only 3 days left. I'm getting pretty sad. Yesterday my friends from the gym threw me a going away picnic at the Royal Botanic Gardens in Sydney. It was absolutely amazing. There were about 20 of us, and they surprised me by all bringing a dish from my blog! How cool is that?! They're seriously such an awesome group of people and friends and I'm going to miss them so much. That's one thing about crossfit, it's such an awesome community, but it makes leaving that much harder. Hopefully I can convince a few of them to come visit me in California though!

Oh how I love Saturday's and Sydney! There are so many great markets and this morning I met my friend at the Eveleigh Farmer's Markets and got lots of yummy veggies and fresh meat! Then we hit up a raw vegan cafe for a late lunch. I got the lettuce tacos made with a walnut mince, salsa, guacamole and cashew sour cream and she got the raw zucchini lasagne made with minced nuts in a cashew cheese. It was something totally new to the two of us, but really tasty! It was also a beautiful day. The sun is finally starting to show its face more and the weather is warming up. Spring is just around the corner!

BAKED CHICKEN FAJITAS

If you weren't already aware I've started whole30 again.  Yes that's right, I failed the first time around.  I have a major sweet tooth and it got in my way!  It's not going to stop me this time though, I'm determined!  So I'm on day 2, and it's going well, but I'm pretty sure it's going to get harder before it gets easier.  So if you have any tips please let me know!  With that being said, my go to meal this week has been baked chicken fajitas.  I made a huge batch Monday night and have been eating it for lunch with heaps of veggies.  This recipe comes from tasteofhome and it's got tons of flavour and keeps me pretty satisfied.  Also, having it prepared and ready to go has helped me stay on track (but it is only day 2 so I'm not going to get ahead of myself here).  And if you're on instagram we've started a little community using #whole30august so check out that hash tag for tons of whole30 approved meals and recipes.  The community of people posting pics there have some awesome looking food and are totally inspiring!

Today's recipe follows on some common themes I've seen arise in my recipes lately, fast and easy.  Tonight I got home from Crossfit at 7:45pm and wanted something quick.  I had chicken in the fridge, but was getting sick of plain chicken and veggies (something I often resort to when I'm in a rush) so I decided I'd try to spice things up a bit.  Best Recipes has a great Moroccan chicken stir fry recipe so I just made a few adjustments to make it paleo friendly and it turned out delicious.  Glad I'll have leftovers for lunch tomorrow!

Today was a good day.  I'll admit planning meals for the whole30 is a bit difficult to get used to, but I'm new at it!  I've been making an extra large dinner so that I have leftovers for lunch the next day and finding that works really well.  It seems like it really comes down to preparation.  Especially breakfast because I like to sleep in, and sometimes that means a less than optimal meal.  So tonight I decided I would make sure that couldn't happen by preparing all the stuff I wanted to have ready for breakfast.  I cooked some chicken and chopped up some veggies, and that way in the morning I can just chuck them in the pan with a couple of eggs and they'll be ready in no time!

ROASTED RED PEPPER AND EGGPLANT DIP

So I was lucky enough to go visit my family in California last week where the sun is shining down!  And it was my sisters 21st birthday so we had to throw her a proper summer BBQ party.  When I think of BBQ I think of meat, meat and more meat, and luckily there was plenty of that to go around!  But I also think about lots of unpaleo side dishes.  So I really wanted to make something nice and yummy that everyone could enjoy.  That's when I came across Tasty Yummies Eggplant and Roasted Red Pepper Dip.  And who doesn't love a good dip?  So I whipped this up and served with lots of veggies and some more sweet potato chips.  It was a hit!
