Life has been exciting and busy lately but I knew it was time to give you an update and share a new recipe. My most recent recipe, The Best Chocolate Chip Cookies I've Ever Made, has been one of my most popular recipes. Possibly because cookies are just amazing in general or maybe I finally learned how to take a decent photograph, but whatever the reason may be, thank you so much for all of the resharing, baking and photo posting. Well it's been a little while since I've posted a recipe because I've been in transition mode. I've just moved back to California after living in Australia for 2 years and it's a very confusing time for me. I've been back for a week and a half now and I have no idea what the heck I'm going to do. And all I want to do it work out and eat, but no ones going to pay me to do that. I suppose until I figure it out that is what I'll do though. Well at least until I run out of money.

I think my coach was trying to torture us tonight.  Literally.  On Monday we had to do the infamous "Fran" WOD and I about died!  I'd been out sick for two weeks prior to this and had this as my first WOD back...brutal right?  Well that's not the worst of it, tonight, only 4 days later, he posts a 1.2km run followed by a 14 minute latter consisting of 30kg thrusters and chest to bar pulls ups!  Needless to say I'm sore this week, but I guess I shouldn't complain, after two weeks off I was dying to get back.  Anyway, with that being said, I do appreciate my coach immensely, he's taught me so much in the past year that I've been training with him and tonights recipe is actually his famous broccoli salad.  We had a games day at the gym back in March and he served us a massive paleo feast afterwards. This was one of the dishes and it was so delicious!  Hope you enjoy it!

PALEO CHICKEN PESTO PIZZA

I really like pizza, which is strange because I really dislike cheese.  I know that may sound weird, but it's true.  I've always ordered my pizza without cheese, so when I though about how I would make a paleo version all I had to figure out was how to make the perfect crust!  I first thought about just using almond meal, but I wanted to make it a bit healthier so I chose to try a cauliflower/almond meal mixture.  Now if you asked me I would say this is probably one of the best pizzas I've ever had, but I'll let you be the judge of that!  Also, I've listed the toppings I've used in the ingredients list, but any meat and veggies will do.

ROASTED RED PEPPER AND EGGPLANT DIP

So I was lucky enough to go visit my family in California last week where the sun is shining down!  And it was my sisters 21st birthday so we had to throw her a proper summer BBQ party.  When I think of BBQ I think of meat, meat and more meat, and luckily there was plenty of that to go around!  But I also think about lots of unpaleo side dishes.  So I really wanted to make something nice and yummy that everyone could enjoy.  That's when I came across Tasty Yummies Eggplant and Roasted Red Pepper Dip.  And who doesn't love a good dip?  So I whipped this up and served with lots of veggies and some more sweet potato chips.  It was a hit!
