Cauliflower Tabouleh Salad

I was grabbing a quick lunch from the Whole Foods salad bar a few weeks ago and they had a salad I hadn't seen before. It was a cauliflower tabouleh. I love trying their salads. One of my favorites is their kale and avocado salad. I wasn't too sure about this one, but I went with it and and grabbed some grilled chicken thighs to go with it. Then I sat down with a kombucha and dug in. And OH MY GOODNESS it was SO GOOD! So much flavor. I think it was all the fresh herbs, the parsley and mint, that gave it such a powerful and delicious flavor. So today, when I looked in my fridge and saw a bag of cauliflower rice, I decided I needed to make it. And if you're wondering what "cauliflower rice" is, it's just the lazy version of chopping up your own cauliflower. And I'll admit, I love it! It's so convenient. I'm always sautéing cauliflower rice to go with my dishes so I love having it on hand. You can find it in the produce section of most grocery stores with the other pre chopped and bagged vegetables.

Cauliflower is a delicious, multifunctional vegetable, but it can also be bland if you don't cook it right or you cook it the same way over and over. PurePharma, a company that I work with, asked if I could come up with something tasty using a whole cauliflower. PurePharma is a supplement company that I love. They truly believe in developing the best products to help us live our healthiest lives. So, of course I was willing to come up with a healthy and delicious recipe to share on their blog. Since it's summertime I decided a salad of sorts would be perfect. I added in some bacon (because bacon makes everything better) and pomegranate seeds from a tree in our garden. The end result was this delicious dish.

I've recently started interning at my gym because I've decided I'd like to become a certified CrossFit trainer. It's incredible the opportunity I've been given to learn from some of the best trainers out there. The owners of my gym, CrossFit 209 Sport, Gabe Subry and Vince Carter are incredible. They've been doing CrossFit since it's humble beginnings and know more about the sport and the way the body works than I could possibly imagine ever knowing. I've recently wondered why I hadn't realized sooner what a strong passion I have for fitness, nutrition and the opportunity to teach others how to become healthy.

Well it was officially day 1 of my 21 Day Sugar Detox and I'm on a high. Can every day be this easy? I have a feeling it won't be! But I'm going to soak up my day 1 accomplishment thats for sure. If you haven't already noticed I love my sweets, so its a difficult one for me to give up. But it also gets me feeling sluggish and I'm ready for a reset. With that being said I will be trying a lot of new meal recipes so I don't get bored and I keep my hands clear of the sweets. Also, the CrossFit NorCal regions are 15 weeks away and its time to get my body ready to kick butt when we make it. And to look good in the array of outfits my teammates are putting together for us. They say when life hands you lemons, make lemonade. Well I'm not saying I've been handed lemons, but I am in a bit of a life limbo at the moment. One of my favorite songs says "don't worry 'bout what you don't know, life's a dance you learn as you go." I know this is true, but the unknown can sure be frustrating. Do you believe in psychics? I wish I did, because I'd be all over that. Well maybe not. What if my future isn't so bright? Just kidding, it is, because those lemons are going to be the best lemonade you've ever tasted, and I'll be sure to blog the recipe for you when I make it. I guess what I'm trying to say is that no matter where you are in life, enjoy it, because you won't get this time back. Right now I absolutely love training and seeing what my body is capable of. And I also love cooking and blogging for you. So for now I might not have a boyfriend, I might not know where I want to live in this world, I might not know what career path I want to take, but I do know that I'm happy, and I know that you will continue to benefit from my trials and multiple errors in the kitchen, so if you do nothing else, just be sure to come back to my blog when you need something healthy and insanely delicious to eat!

I've just moved back to California after living in Australia for 2 years and it's a very confusing time for me. Well it's official, I'm moving back to California. Such a bitter sweet really. I certainly miss my family and friends back home, but I've come to call Australia my second home. Well I'm pretty sure I've injured myself from the Tough Mudder race we ran last weekend. I'm pretty bummed about it because it's really interfering with my training! It's my right ankle and it just kills to walk or run on. It started hurting a day and a half after the race which was strange, and I don't remember doing anything jarring to it so that sucks. I suppose I need to go see a doctor and get an x-ray, ugh! Anyway, that's my drama for today. I'll let you know how I go at the doctor. I've still been going to crossfit every night which is probably a stupid idea, but I hate missing days.
