Happy Friday! I'm excited for the weekend. It's Father's Day and I've finally learned how to use a barbecue. I know, it took me a while, but now that I do I love it. Chicken just tastes so much better off the grill. Especially in this summer weather. I had a little time yesterday so I played around with a chicken marinade and this one turned out so good. I love balsamic vinegar, and there's a local producer here, Calivirgin, who makes one so good it shouldn't be allowed. I knew it would make a delicious marinade. I decided to mix it up with a little Tessemae's Honey Mustard to give it a kick and needless to say I couldn't stop eating this chicken last night. ROASTED VEGETABLE SALAD WITH CHICKEN

The idea for this salad came to me after having lunch with a friend at California Pizza Kitchen last week. I absolutely love their grilled veggie salad and for some reason I'd never thought about how simple it would be to make on my own. Especially since I could easily make a large batch at once to feed a group or to last me most of the week. So I ran to the grocery store and whipped one together. This will definitely be a staple at my house from now on. Another reason that I love this salad? It's insanely healthy. And when insanely healthy meets crazy delicious, I'm pretty much sold. I've set my sights on competing at the CrossFit Games one day and that means my training and diet need to be in check. My competitors eat, sleep and breath this sport, and if I plan on keeping up with them, I have to too. Sometimes my dreams scare me, but whats that saying? "If you're dreams don't scare you they aren't big enough." I think I read that somewhere. And I couldn't agree more. I've made a lot of sacrifices in my career and life for this, so I'll be damned if I don't give it my all. Plus, this is what makes me happy, and isn't that one of the most important things in life? Nothing's worth it if you aren't happy. What makes you happy? Well, besides this salad, because I've already assumed that. Enjoy!

I hope everyone had a great Memorial Day weekend. I was at the NorCal CrossFit Regional competition all weekend competing with my team and it was amazing. It was my first time competing at such a large event as well as my entire teams first time. We learned so much, met so many amazing and inspirational athletes and pushed ourselves to the limit. My sister spent the entire weekend with me and is seriously my biggest fan. I don't know what I would have done without her. She constantly told me how amazing I was, did whatever I needed to do and carried my cooler around for me. She's an up and coming crossfitter herself and I can't wait to see where she goes in this sport. My parents also came out to watch me which was probably the highlight of the weekend for me.

A lot of things have been happening in my life lately, therefore I felt you needed an update and could probably use a new recipe in your life. I've recently started interning at my gym because I've decided I'd like to become a certified CrossFit trainer. It's incredible the opportunity I've been given to learn from some of the best trainers out there. The owners of my gym, CrossFit 209 Sport, Gabe Subry and Vince Carter are incredible. They've been doing CrossFit since it's humble beginnings and know more about the sport and the way the body works than I could possibly imagine ever knowing. I've recently wondered why I hadn't realized sooner what a strong passion I have for fitness, nutrition and the opportunity to teach others how to become healthy.

Day 7 of my 21 Day Sugar Detox baby! That's right, this is officially a PR for me, I've never made it longer than 5 days without sugar. And I've tried, several times I hate to admit. What's kept me on track? Probably the copious amounts of training I've been doing that keeps me busy at the gym and a lot of experimenting with new dishes like this one. Adding new flavors to my meals every day keeps things fun and exciting. I still have cravings though, and I'm still nervous that I could fail, but for now I will keep trucking along because I'm finally one third of the way to my goal. So that's that, now who's excited for the CrossFit open? Can you believe it's in less than 3 weeks?! I can't! I was sick this weekend so I've now had 4 days off in a row and I'm feeling extremely sluggish and crappy. I'm nervous for tomorrows workout, and I hear we're doing track work, the kind of stuff that kills me! It's gonna hurt thats for sure. Hopefully I can get my ass in good enough shape in these last few weeks though. I think the open is such a cool experience because you can literally compare yourself to every CrossFitter in the world. There aren't many opportunities to do that and I'm really excited to see how I stack up. If you're giving the competition a go, good luck and make sure you have fun while you're doing it! Also, be sure to make lots of paleo dishes to keep you fuelled and fired up.

SPICY CHICKEN NUGGETS WITH RANCH DRESSING

It is officially day 4 of my 21 Day Sugar Detox. Say what?! Only day 4?! Wholly crap! That's how I feel about that. I mean seriously, for the past few months I feel like my life has just been flying by and I can't slow down time, and now, well now it feels like it's at a standstill. So there you go, if you're at a point in your life where you'd just like to slow things down, do a sugar detox. The days will feel much longer than they actually are. But seriously, this is hard. But I knew they would be when I started. Day 1 was awesome, day 2 was pretty good, but last night on day 3 I just wanted to raid the fridge for anything sweet. I mean anything! Normally I'd let myself have some dark chocolate, or dried fruit, and on occasion I would bake some paleo treats, but I seriously wanted anything sweet. Like an apple with almond butter was just screaming my name. But I prevailed and had my spaghetti squash with ground turkey and tomato sauce and went to bed like a good little girl. Am I going to be able to make it the whole 21 days though? It seems like a lifetime right now! Okay it's time to stop being such a baby. I know a lot of people have done the 21 Day Sugar Detox and been successful, and I deserve to be successful as well. I am having fun trying new recipes for lunch and dinner and hope their deliciousness keeps you on track as well should you decide to embark on a similar journey. I'm pretty excited to see what happens once I get past the cravings. I didn't sleep well the first 2 nights, but I slept better last night. And I already feel incredibly less sluggish and faster at the gym. I think it still might get worse before it gets better, but I'm ready to take it head on. So if you think you're tough enough then give it a go join me so we can support one another. Oh, and Happy Valentine's Day. I'm off to get a massage and bask in the sunshine, so excited it's going to be in the 70's today!

Is it just me or do paleo challenges seem to be in the air at the moment? Well I was feeling a bit left out so I've decided to start one of my own tomorrow! Plus I could really use a kick in the butt. If you've always wanted to try a paleo challenge, or are just looking for that extra push feel free to join in! I'm going to outline the challenge here, and it's going to be tough I'm not going to lie. If this will be your first challenge and this sounds a bit too extreme let me know so I can modify it for you. I will be doing a 6 week strict zone paleo challenge. I've chosen 6 weeks for a couple reasons. 1) Because I've done the 21 day no sugar challenge, I've done the 30 day paleo and whole30 challenges, but I've never stuck with anything longer than that and 2) because Thanksgiving is in 6 weeks!

Well today was a lovely day but much less productive than yesterday. I slept in, had a few cups of coffee and strolled down to the beach for a bit. That was pretty much my whole morning. Then I took a jog over to my friends house to get a workout in and came back home to do some cooking. Tonight I put together this dairy free butter chicken. I'm loving Indian food over cauliflower rice right now!
