SAMOA COOKIE BARS

SAMOA COOKIE BARS

There's so much I want to tell you, yet nothing seems to want to travel from my brain to the keyboard. I don't know what's happening. So this is either going to be a short post, or a ramble, but either way I won't be hurt if you jump ahead to this bomb recipe. A friend of mine from the gym found a photo on facebook of some insanley delicous looking samoa brownie cookie chocolately heavenly like bars and asked me if I could make them paleo. And since I love her, I did it. It was torture though because I wanted to eat all of them, but I couldn't because I'm doing the whole30 right now, but I'm on day 27! So that's exciting right? Not really when you have these starring you in the face, but it's all good. And I mean who does a 21 Day Sugar Detox, straight into a whole30? Crazy people thats who. And yes I know I'm slightly crazy, it's no secret. So anyway that's that. What else is happening in my life? Since you're all dying to know. We're doing the CrossFit open competition and luckily I'm competing on a very beastly team because I sprained my wrist last week and it's ruined my hopes and dreams of dominating the leaderboard. Okay, it hasn't ruined my hopes and dreams, but it does suck. We were working on a 3 rep max hang clean and on my third one my elbow collided with my knee sending 195 lbs of force onto my wrist. Yes it was devastating. I managed to tape the crap out of it and get 8 muscle ups on last weeks workout, but this week doing cleans was not fun. I did a decent amount, but I had to be extremely cautious on each one. So when you see me fall off the leaderboard you will know why, but like I said, my team kicks ass so I'm not worried. I'll be well rested by regionals and probably more fit than I would be if I hadn't sprained my wrist. Strange I know, but I'm a pretty crappy runner, and I have a feeling I'll be doing a lot of running the next few weeks. So be scared, I'm coming for you.

PUMPKIN SPICED PANCAKES

PUMPKIN SPICED PANCAKES

Do you ever just get real bummed out and want to give up on something? How do you pull yourself out of a rut? I know I'm not the only one this happens to (or at least I hope I'm not!) and sometimes we just need a hug, or a pep talk, or maybe a swift kick in the ass. We all need something different I imagine. I think I needed all of the above to get me out of this one. I had my first NorCal crossfit competition this weekend, the Sactown Throwdown. It was good and bad. It was a team competition and I'm thankful to have had such supportive teammates, but I managed to get pretty bummed out with my performance. The thing is I was very capable of doing all the movements and lifting some heavy weight, but why can't I keep up with some of the other girls? Should I be training harder? Am I ever going to be as good as them? I feel like the second I get better, my competitors get 1o times better. What the hell? So there it is, I suck at life sometimes too. But you can't let it get you down. And no one is going to do the work for you. You have to take it as a lesson learned and move on. I'm also lucky to have a trainer who gave me a hug, then gave me a pep talk, then gave me a workout that kicked my ass. It reminded me I can compete with the beasts in this sport, and I'm not going to give up. I want this just as bad as they do, and I'm going to work my ass off until I get there. So if you're stuck in a rut, just remember you aren't the only one, but you are the only one who can fix it. This applies to all aspects of our lives, not just fitness and diet, it might be something at work, or in your personal life, but you have the capability to make what you want out of any situation. Hopefully you have someone to talk to, but you have to do this for yourself. So when you're finished eating these pancakes, get out there and kick ass. Because you deserve it.

COCONUT GINGER CHICKEN

COCONUT GINGER CHICKEN

Well it's official, I'm moving back to California. Such a bitter sweet really. I certainly miss my family and friends back home, but I've come to call Australia my second home. I'm going to miss so many people and so many things about this place. Oh man, and I have to live in winter for a whole year! I'm so not a fan of cold weather, it better get hot before I leave so I can get a sun tan. I can't go back looking pasty white when everyone else just had summer back home!

BUTTER CHICKEN

BUTTER CHICKEN

Well today was a lovely day but much less productive than yesterday. I slept in, had a few cups of coffee and strolled down to the beach for a bit. That was pretty much my whole morning. Then I took a jog over to my friends house to get a workout in and came back home to do some cooking. Tonight I put together this dairy free butter chicken. I'm loving Indian food over cauliflower rice right now!

BANANA DOUBLE CHOCOLATE COCONUT ICE CREAM

BANANA DOUBLE CHOCOLATE COCONUT ICE CREAM

Happy birthday to me! Ahh I've officially surpassed my quarter life, I feel old! A few of my friends have told me that 26 was their best year, but I reckon people just say that to make you feel better about getting older. I'm sure someone told me that last year when I turned 25. Well here's to a better year than the last (and when I turn 27 hopefully someone will tell me that's going to be my best year). Maybe I'm just like the quote "like a fine wine I get better with age". Is that how it goes? I think it's something like that. Anyway, hello, I'm 26 and this will be my best year yet! So to kick it off I've joined in on a 30 no sugar challenge my coach has outlined for us. Here's a link to The NoSugar Challenge if you're interested in participating. And if you are let me know, it would be great to have some fellow challengers. On top of my trainers suggestions I will be eating all Paleo food (of course) in Zone portions, and I will do my best to stick to what they've outline in that chart as "favourable" foods. I know this is going to be hard, but I also know I want to start 26 off with a bang, and what better way than by feeling really healthy and getting really fit?! And just in time for summer (I'm in Australia). So this recipe is quite delicious, and if you just exclude the chocolate it also works for the no sugar challenge. Feel free to make it either way that suits you!

CHOCOLATE FROSTING

CHOCOLATE FROSTING

Well today I decided to be less of a lazy ass than yesterday. So that was a good start. I met a couple girlfriends from the gym for coffee near the beach, and by the time we left it was quite warm out. I seriously just wanted to go down to the beach and sunbake, but I suppose it's still too early. Since that was out of the question, I thought, I should go for a run. Not only do I dislike running, I suck at it, so I figure, it's time to just suck it up and do it. My friends have also just moved near by and decked out their garage with weights, pull up bars, the works really. So I took my jog over to theirs and did a little weight lifting, some MUs (which I think I have now mastered properly!) and a WOD that we threw together, with more running! I'm serious about turning this weakness into a strength (okay that might be a bit ambitious, but I'll be damned if I don't try). Anyway, you're probably just wanting to get the recipe now so I'll shut up. Use this frosting for anything (and everything) it makes your paleo cakes, cupcakes, bacon (just kidding) even more tasty (I know, it's hard to believe they could taste any better, but they do).

RASPBERRY COCONUT FLOUR PANCAKES

Last night I went out with a bunch of girlfriends from work to a Burlesque show. I'd never been to one before but it was so much fun. We danced, we drank and we drank some more! This morning I decided I needed some pancakes so I did a little experimenting with the help of TIANA fair trade organics and came up with these yummy things.

CITRUS COCONUT COOKIES

CITRUS COCONUT COOKIES

Oh no I've failed you. I promised one recipe a day and I posted nothing yesterday. Well to make it up to you I will try to post two recipes today. I do have an excuse though. Typically I come home from work and the gym, write a post, eat, shower and go to bed. But yesterday one of my best friends (who's in the navy) returned home from six months at sea! I'm beyond ecstatic to have her back in my life, she's one of my crossfitting buddies as well so she has been very missed at the gym. After work we went out for Tapas (which was a bit of a paleo fail) but I believe we are all entitled to a splurge on the rare special occasion! I could talk for days about how much fun we had catching up and indulging our taste buds in what felt extremely naughty, but I'm on my lunch break posting this and the minutes are ticking away, so on with the recipe. This is something I tried recently from the preppy paleo. They're really tasty and something a bit different.

BLUEBERRIES AND CREAM

BLUEBERRIES AND CREAM

Oh Mondays...what else is there to say really? Except why must you be thrust upon me so quickly. Well I don't have much for you today, it was a long day and I'm tired, oh but I smashed tonights WOD, so that was good. This is a simple recipe, actually it's not even a recipe so I apologise, but it's a great easy treat when you need something sweet and cold.

APPLE CINNAMON OMELETTE

APPLE CINNAMON OMELETTE

This is a recipe my mom told me about. It's not her recipe, it's one she found by following some forums on the 17 day diet. I've named it an apple cinnamon omelette, but I think they refer to it as mock french toast. Whichever you choose it's really yummy and a great way to switch up your eggs in the morning!
