The sun has been shining here in California for a few day, although I hear the rain is coming again, but nevertheless spring is on my mind and I can’t wait to light up the barbecue more. I decided it was time to come up with an epic burger recipe and this one certainly hit the spot! A beef burger with cilantro avocado mayo and grilled onions on a brioche burger bun made from Zenbelly’s Everything Dough ebook (game changer). And of course a side of sweet potato fries. You could also wrap these burgers in lettuce, but if you’ve been craving a real bun like I was this is by far the best gluten and grain free bread I’ve made. Zenbelly’s recipe uses cassava flour and potato starch and if you get her book there’s also some killer cinnamon rolls I highly recommend trying

I love breakfast. And I LOVE waffles. But I also like to make sure to get plenty of protein in the morning. So when I got some of the new Paleo Bakehouse pancake mix I was so excited to try it. My first thought was, how can I make a waffle? And then, how can I make it the perfect size to enjoy with the rest of my breakfast? This is absolutely delicious and so so easy to make! If you want to make a breakfast sandwich (which I also highly recommend) then just double this recipe. And I won't tell anyone if you smother a little butter on it. Because it's quite tasty that way too.

Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. We spent five days lifting weights, sight seeing, bumping into friends and I even had the pleasure of attending a Paleo Cookie Swap hosted by Paleo Parents at their home in Virginia.

Happy Halloween! I hope everyone has some fun plans for the weekend. I'll be going to a costume party tomorrow evening then lifting at my second weightlifting competition Sunday afternoon. It should be a busy fun filled time. I've been trying to think of some delicious treats to bring to the party and decided to bust out my mini tart pan. This spiralled into several different recipe ideas and I ended up spending the entire day making a variety of mini tarts. It was fun and tasty. This was one of my favorites and it's the perfect dessert/appetizer to take or put out at your party this weekend or anytime during the holiday season. I'm just about to head out for a competition in Reno this weekend. It will be my first individual competition which is nerve racking but also quite exciting! But before I do I had to share this recipe with you. I stumbled upon Real Food By Dad this week and boy does he make some incredible dishes! They aren't paleo, but his photographs are mouth watering. One of his posts is a series of stuffed baked potatoes and I decided to make something quite similar with a sweet potato. This will certainly be my new go to brunch. This recipe came about in somewhat of an odd manner. I've recently moved back to my home town and I got invited to a barbecue with some friends I hadn't seen in a while. CrossFitters who love to eat none the less. I went out to the garden to pick some zucchini but I knew I needed to bring a paleo treat along. That's how they know me! I had a very short amount of time to whip something up and very few ingredients in my house but I threw a few things in a bowl and these delicious creations came about. Happy Friday! I'm excited for the weekend. It's Father's Day and I've finally learned how to use a barbecue. I know, it took me a while, but now that I do I love it. Chicken just tastes so much better off the grill. Especially in this summer weather. I had a little time yesterday so I played around with a chicken marinade and this one turned out so good. I love balsamic vinegar, and there's a local producer here, Calivirgin, who makes one so good it shouldn't be allowed. I knew it would make a delicious marinade. I decided to mix it up with a little Tessemae's Honey Mustard to give it a kick and needless to say I couldn't stop eating this chicken last night. If you're looking for a flavorful way to mix it up, give it a try, it's so simple and so delicious.

MANGO BERRY SMOOTHIE

I'm finally getting back into the groove of things at the gym. After a week off my body is ready to get back to training. I've decided to follow the CrossFit Invictus Competition Program and I'm really excited about it. A new program cycle began yesterday so it's perfect timing. And I have a few friends at the gym who want to follow along as well which will make it fun. The combined focus on foundational strength and aerobic capacity should be great in preparing me to accomplish my goals this year. Improving my endurance is crucial in my attempt to compete as an individual next year. It's always been my weakness and I can't say I love conditioning. Give me gymnastics and let me lift some heavy weights and I'm happy. But not everything is going to be fun when you're trying to reach a bigger goal right? I mean I had to row 1500 meters 3 times yesterday. Talk about brutal! But I know I'm one step closer to my goal. And it will get easier right? RIGHT? Actually, the most brutal part about yesterdays workout was the weather. It was 115 degrees! So HOT! I got home and I couldn't even fathom cooking. So I decided to make a smoothie. I rarely have cravings for them. But this weather had me wanting something cold and fruity. So I whipped up this mango berry drink and it was delish!
