I came up with this recipe the morning after I made my Beef Burgers with Cilantro Avocado Mayo. I had made a batch of Zen Belly's Brioche Burger Buns from her Everything Dough ebook (which are by far the best bread rolls I've made) and I had one leftover. I baked everything right on top of the bun and the crust turned out nice and crunchy. It was delicious.

Happy Holidays! Life has been a bit hectic lately, but I know that's typical this time of year. Balancing work, training, holiday parties, family gatherings, travel and a few competitions has kept me on my toes, but I've had a blast doing it all. Last week I was in Washington DC competing at the American Open for weightlifting and what an incredible experience its was. We spent five days lifting weights, sight seeing, bumping into friends and I even had the pleasure of attending a Paleo Cookie Swap hosted by Paleo Parents at their home in Virginia.

MINI BREAKFAST TARTS

What a relaxing weekend. I'd been so busy with competitions and different events that I hadn't had a chance to just settle down and relax. I'll admit I'm not very good at that. I kept trying to find things to do and places to go, but I did chill out a little bit. Saturday I got to train with two of my favorite girls, Sara and Rose. We did some conditioning then enjoyed a nice lunch outside on the patio at Porters in Lodi. It's still 80 degrees here in California so I'm taking full advantage of it as long as possible. Winter and I aren't really friends. Then on Sunday I woke up and made these incredibly delicious breakfast tarts before heading up to Sacramento to watch some of my friends compete at the Women's Pro-Am Powerlifting competition. It was awesome! Maybe one of these days I'll sign up to compete at one. I need to suck less at deadlifting first though.

BACON, SPINACH and TOMATO QUICHE

Some big changes are happening in my neck of the woods, and the first of them is my attempt to take less crappy pictures. I still have a lot of work to do, and until I buy a new camera, my iPhone will have to do. I've also made some big career moves (aka I quit my job) to focus on training and my blog. Clinton Kelly made a comment that really hit home for me, he said "I realized this week that I just cannot do it all, so I will choose to to do what I can fabulously." I have a tendency to take on more then I can handle, and there are so many things I want to do with my life, but there are a few things I'm extremely passionate about and that I want to be exceptional at. I've decided to focus my energy on being the absolute best at those things; the things I love, the things I'm good at, and the things that spark my passion and excitement. I'm excited for the future and for new challenges. I'm excited to share simple healthy recipes here, and to see what my body is truly capable of achieving in the sport of fitness. This weekend I'll be competing at the NorCal CrossFit Regional with my team Caffeine and Kilos, and two weeks later I'll give my best shot at the second round combine of the National Pro Fitness League in Las Vegas. Stay tuned for updates, and remember, sometimes it's scary to take a chance, to risk it all, but in the end, where's the fun in playing it safe? Alright, on to the recipe! I wanted to share a breakfast dish that you could make ahead and enjoy in a hurry. We all get busy and it's nice to have healthy options to keep us on track with our goals. 2 INGREDIENT PANCAKES

How many times were you asked, "what do you want to be when you grow up?" I'm sure we've all been asked that question. Some of us know and pursue that passion, some of us know, but settle for something else, and some of us have no freaking clue. I think I was one of the no freaking clue people. So when I ventured off to college I spent the first year trying to figure it out, and when I still hadn't, I settled for a business degree because it seemed reasonable, realistic, and the classes were fairly easy. Having a business degree has been great, I've had some good jobs since college, made some good money, travelled and seen the world. I wouldn't ever trade it. But upon returning to California after spending two years in Australia, I wanted a fresh start. I wanted to make sure this time I didn't settle, this time it was about finding something I was passionate about. Sure it's important to make a decent living and to be able to support yourself and your family, but its equally important to enjoy what you do. I've spent my life in sports and have always loved nutrition, hence the blog, but it wasn't until now that I realized this is what I needed to do with my life. So I'm doing it. It's that simple. It's going to be a learning experience, and it's going to take time before I'm living comfortably again, but I'm happy, and I think that's the most important part. I just finished my first week of coaching and it was awesome. I'm programming workouts and meeting some amazing people who have the same passion I do. To continually improve their health and fitness. We all struggle with things in life, and I love being that person they come to to start their day, or to finish it off and I always strive to ensure they leave feeling stronger and better than they did the day before. So I made a joke on Instagram that I wouldn't share this recipe until I found my future husband. But then I realized you'd probably be waiting a very long time. So I'll just give it to you anyway. However, if you take advantage of this delicious recipe, you can pay me back by setting me up with any hot single men you might know. The crossfit open competition just started. I've been spending my days training like a beast, and my nights chillin' like a grandma in the hopes that I will be at least adequate against the insane athletes taking over this sport. Seriously, where are these monsters coming from? My life is the gym (hence why I need you to find me a boyfriend) and I still feel inadequate. And I really don't know what to expect with this first workout. I mean its 17 minutes of burpees and snatches! Okay, burpees and snatches? Fine. 17 minutes? Shoot me! I'm a sub 5 minute kind of WODer. Hopefully my inner beast will kick in and some bundled up form of endurance which I've still yet to find will magically appear. That would be ideal at least. Good luck if your competing in the open, or good job if you've already pushed yourself through this first WOD. You're an animal!

SPICY CHICKEN TACOS WITH COCONUT FLOUR TORTILLAS

Day 7 of my 21 Day Sugar Detox baby! That's right, this is officially a PR for me, I've never made it longer than 5 days without sugar. And I've tried, several times I hate to admit. What's kept me on track? Probably the copious amounts of training I've been doing that keeps me busy at the gym and a lot of experimenting with new dishes like this one. Adding new flavors to my meals every day keeps things fun and exciting. I still have cravings though, and I'm still nervous that I could fail, but for now I will keep trucking along because I'm finally one third of the way to my goal. So that's that, now who's excited for the CrossFit open? Can you believe it's in less than 3 weeks?! I can't! I was sick this weekend so I've now had 4 days off in a row and I'm feeling extremely sluggish and crappy. I'm nervous for tomorrows workout, and I hear we're doing track work, the kind of stuff that kills me! It's gonna hurt thats for sure. Hopefully I can get my ass in good enough shape in these last few weeks though. I think the open is such a cool experience because you can literally compare yourself to every CrossFitter in the world. There aren't many opportunities to do that and I'm really excited to see how I stack up. If you're giving the competition a go, good luck and make sure you have fun while you're doing it! Also, be sure to make lots of paleo dishes to keep you fuelled and fired up.

SPICY CHICKEN NUGGETS WITH RANCH DRESSING

It is officially day 4 of my 21 Day Sugar Detox. Say what?! Only day 4?! Wholly crap! That's how I feel about that. I mean seriously, for the past few months I feel like my life has just been flying by and I can't slow down time, and now, well now it feels like it's at a standstill. So there you go, if you're at a point in your life where you'd just like to slow things down, do a sugar detox. The days will feel much longer than they actually are. But seriously, this is hard. But I knew they would be when I started. Day 1 was awesome, day 2 was pretty good, but last night on day 3 I just wanted to raid the fridge for anything sweet. I mean anything! Normally I'd let myself have some dark chocolate, or dried fruit, and on occasion I would bake some paleo treats, but I seriously wanted anything sweet. Like an apple with almond butter was just screaming my name. But I prevailed and had my spaghetti squash with ground turkey and tomato sauce and went to bed like a good little girl. Am I going to be able to make it the whole 21 days though? It seems like a lifetime right now! Okay it's time to stop being such a baby. I know a lot of people have done the 21 Day Sugar Detox and been successful, and I deserve to be successful as well. I am having fun trying new recipes for lunch and dinner and hope their deliciousness keeps you on track as well should you decide to embark on a similar journey. I'm pretty excited to see what happens once I get past the cravings. I didn't sleep well the first 2 nights, but I slept better last night. And I already feel incredibly less sluggish and faster at the gym. I think it still might get worse before it gets better, but I'm ready to take it head on. So if you think you're tough enough then give it a go join me so we can support one another. Oh, and Happy Valentine's Day. I'm off to get a massage and bask in the sunshine, so excited it's going to be in the 70's today!

PUMPKIN SPICED PANCAKES

Do you ever just get real bummed out and want to give up on something? How do you pull yourself out of a rut? I know I'm not the only one this happens to (or at least I hope I'm not!) and sometimes we just need a hug, or a pep talk, or maybe a swift kick in the ass. We all need something different I imagine. I think I needed all of the above to get me out of this one. I had my first NorCal crossfit competition this weekend, the Sactown Throwdown. It was good and bad. It was a team competition and I'm thankful to have had such supportive teammates, but I managed to get pretty bummed out with my performance. The thing is I was very capable of doing all the movements and lifting some heavy weight, but why can't I keep up with some of the other girls? Should I be training harder? Am I ever going to be as good as them? I feel like the second I get better, my competitors get 1o times better. What the hell? So there it is, I suck at life sometimes too. But you can't let it get you down. And no one is going to do the work for you. You have to take it as a lesson learned and move on. I'm also lucky to have a trainer who gave me a hug, then gave me a pep talk, then gave me a workout that kicked my ass. It reminded me I can compete with the beasts in this sport, and I'm not going to give up. I want this just as bad as they do, and I'm going to work my ass off until I get there. So if you're stuck in a rut, just remember you aren't the only one, but you are the only one who can fix it. This applies to all aspects of our lives, not just fitness and diet, it might be something at work, or in your personal life, but you have the capability to make what you want out of any situation. Hopefully you have someone to talk to, but you have to do this for yourself. So when you're finished eating these pancakes, get out there and kick ass. Because you deserve it.
