SPICY CHICKEN TACOS WITH COCONUT FLOUR TORTILLAS

SPICY CHICKEN TACOS WITH COCONUT FLOUR TORTILLAS

Day 7 of my 21 Day Sugar Detox baby! That's right, this is officially a PR for me, I've never made it longer than 5 days without sugar. And I've tried, several times I hate to admit. What's kept me on track? Probably the copious amounts of training I've been doing that keeps me busy at the gym and a lot of experimenting with new dishes like this one. Adding new flavors to my meals every day keeps things fun and exciting. I still have cravings though, and I'm still nervous that I could fail, but for now I will keep trucking along because I'm finally one third of the way to my goal. So that's that, now who's excited for the CrossFit open? Can you believe it's in less than 3 weeks?! I can't! I was sick this weekend so I've now had 4 days off in a row and I'm feeling extremely sluggish and crappy. I'm nervous for tomorrows workout, and I hear we're doing track work, the kind of stuff that kills me! It's gonna hurt thats for sure. Hopefully I can get my ass in good enough shape in these last few weeks though. I think the open is such a cool experience because you can literally compare yourself to every CrossFitter in the world. There aren't many opportunities to do that and I'm really excited to see how I stack up. If you're giving the competition a go, good luck and make sure you have fun while you're doing it! Also, be sure to make lots of paleo dishes to keep you fuelled and fired up.

WHOLLY CAPPELLO'S I'M EATING PASTA

WHOLLY CAPPELLO'S I'M EATING PASTA

OMG I just ate pasta! And I'll admit I felt a little guilty. I haven't had real pasta in over a year! This is crazy. And possibly the greatest thing since bacon, if I dare say that. So there's this awesome company out of Colorado called Cappello's who sent me samples of the three grain free pastas they carry; fettuccini, gnocchi and lasagne. And I thought, where do I even begin? Is this even going to be any good? I love pasta, and it was a tough one to give up when I went paleo, but it's been over a year now since it's touched my lips and I was content with my life and the lack of pasta within it, or so I thought. But then this happened. I decided to give the fettuccini noodles a whirl first and try a traditional spaghetti and meatball recipe (because I love spaghetti and meatballs). And let me just begin by saying this was so easy to cook. The pasta came shipped to me with a freezer bag to keep them fresh, and then it said to keep them in the fridge, or freeze them if you want to use them later. So I had this box in the fridge and the rest are in the freezer to play with later. I boiled up a little water, popped this package in, and boom, ready in 45 seconds! 45 freaking seconds! How perfect is that?

Spaghetti Squash with Ground Turkey

Spaghetti Squash with Ground Turkey

Well I've been MIA a bit. My apologies. I hadn't even realized how long it had been. And I really don't have an excuse. I've just been adjusting to life back in California...which consists of training for about 3 hours a day, eating and sleeping. I can't really complain.  But I suppose I need to start thinking about what I want to do with my life. Okay that was boring. What else can I tell you. I miss Australia. And summer. At least its been a pretty mild winter here so far. The sun has been shining almost every day since I've been back so thats nice! Anyway, on to the spaghetti squash. If you've cooked this before then I apologise again for boring you, but if you haven't then get excited! Spaghetti squash didn't seem to exist in Australia so I was majorly deprived! Now I'm in heaven. I could eat this every night. So here's how to cook it, and here's a simple turkey marinara sauce to top it off with, but if you have a favorite pasta sauce feel free to try that atop this amazing veggy!

MEXICAN MEATZA

MEXICAN MEATZA

Well my days in Australia are dwindling. Only 3 days left. I'm getting pretty sad. Yesterday my friends from the gym threw me a going away picnic at the Royal Botanic Gardens in Sydney. It was absolutely amazing. There were about 20 of us, and they surprised me by all bringing a dish from my blog! How cool is that?! They're seriously such an awesome group of people and friends and I'm going to miss them so much. That's one thing about crossfit, it's such an awesome community, but it makes leaving that much harder. Hopefully I can convince a few of them to come visit me in California though!

CITRUS AND HERB ROASTED CHICKEN

CITRUS AND HERB ROASTED CHICKEN

Last night my friend Sarah invited me over for dinner to catch up. She made us a delicious zone paleo feast and I immediately had to share the meal with my blog! I asked if she could write up the recipe and maybe a bit of a "guest" post and this is what she sent me. I'm slightly embarrassed to post this, but I'm also extremely flattered. Sarah has been such a great friend since moving to Australia and I wish I could just toss her in my suitcase and take her back to California with me!

PALEO CHILI

PALEO CHILI

Oh how I love Saturday's and Sydney! There are so many great markets and this morning I met my friend at the Eveleigh Farmer's Markets and got lots of yummy veggies and fresh meat! Then we hit up a raw vegan cafe for a late lunch. I got the lettuce tacos made with a walnut mince, salsa, guacamole and cashew sour cream and she got the raw zucchini lasagne made with minced nuts in a cashew cheese. It was something totally new to the two of us, but really tasty! It was also a beautiful day. The sun is finally starting to show its face more and the weather is warming up. Spring is just around the corner!

ROASTED PUMPKIN AND ONION SOUP

ROASTED PUMPKIN AND ONION SOUP

Happy Friday! Boy was I ready for the weekend. Or at least for the end of the work day so I could hit up crossfit. My sister asked me if I could send her a picture doing a one-handed handstand. She's made Friday her official one-handed handstand day on instagram so of course I was happy to participate. I wanted to go above and beyond though and do one on a kettlebell. Well that proved harder than expected! But I managed to get one on the parallet bar, which made me very happy until my coach did one on the kettlebell! Always one upping me. So of course I had to beat him in the WOD and I did just that, 419 reps over his 412 (you win some, you lose some) but as long as you win the majority of them!  I'm not competitive or anything. Haha. Tomorrow morning I'm going to do some more practice on the kettlebell handstand so I'll be sure to let you know how I go.

CHICKEN FAJITA SALAD

CHICKEN FAJITA SALAD

Tonights post is more of a meal than a recipe (since I've posted the recipes for all of the components of this salad in the past) but it's super healthy, super paleo, and a great meal for anyone following whole30 like I am right now.  I'm only on day 3 and can tell I'm doomed for failure unless I come up with some new and exciting dishes!  So throw this together and pretend like you just got take away from Chipotle and devour it!
